Pommes Anna is the classic French dish created by Chef Adolfe Duglere in the 19th century in honor of actress Anna Deslions. This copper two-piece pan is a classic design that allows the thinly sliced potatoes to cook evenly throughout and also uses the lid for turning out the completed dish. Anna’s potatoes will be exquisitely crisp on the outside and soft and buttery on the inside. Bon appétit! Two pieces; top is 1½" high and bottom 5" deep. The lid fits over the bottom. Brass handles (called ears) on each piece. Tin lined. Dimensions are 9½" diameter x 5" total depth. Four-quart capacity. Find recipes, techniques and tips in our new Things Cooks Love cookbook.
