Cocotte is the French word for "casserole," but the word is also widely used to refer to a variety of deep oval or round cooking pots or casseroles with heavy, tight-fitting lids that are perfect for slow-cooking moist and delectable stews and roasts. They are made from enameled cast iron, flame-resistant ceramic or sturdy white porcelain, among other materials. The heavy-duty cast-iron or ceramic cocotte is sometimes referred to as a Dutch oven. It can be used to brown or sauté foods over direct heat before being placed in the oven.
Cocottes are available in a broad palette of colors and finishes and a wide range of sizes and shapes.
