Amazingly lightweight and perfectly balanced, this boning knife carries a thin blade constructed from MBS-26 stainless steel, making it exceptionally hard yet flexible. The asymmetrical cutting edge is ground 80% on the right side of the blade and 20% on the left, giving the blade a thinner, sharper edge. This tapered-style edge takes pressure off ingredients, for a perfect finished cut. The blade is then polished to a mirror finish. The incredibly smooth and rounded European-style composition handle has a sophisticated look and lasts much longer than wood handles. Use this knife to separate meat from the bone. Made in Japan.
