A French term for “under vacuum,” sous vide is a slow-cooking process used by gourmet restaurants. Food is sealed in an airtight plastic bag and heated in a low-temperature water bath for a prolonged period of time. The resulting texture, taste and appearance are superior to traditional cooking. Meats, poultry, seafood, fruits and vegetables are just a sampling of the foods that can be cooked in this manner.
Sous vide has been hailed as “one of the most important culinary innovations of modern times” by esteemed food scientist and author Harold McGee. When you use this approach, food cooks properly throughout. The natural flavor is preserved, as well as the freshness and color. Unlike conventional methods with high heat, you lose no nutrients or moisture, and won’t experience shrinkage.
The fundamental differences are in the application of heat and vacuum sealing. Instead of cooking at higher temperatures, you slowly heat the food to its ideal serving temperature. The airtight plastic bag efficiently transfers heat between the water and food. Plus, it keeps food fresher longer.
Sur La Table has partnered with Julabo, a highly respected company that manufactures sous vide equipment, to bring this technique into your kitchen. Sous vide is an art home chefs can master with spectacular results using thermal immersion circulators— devices that regulate water temperature. Because of the precision of this procedure, the incredible flavors and aromas are simple to reproduce time and again.
With the machines developed by Julabo, sous vide is easily accessible and attainable. These units are the most precise, easiest-to-use systems you will find. Maintaining the correct temperature of water in a slow cooker or pot is a rigorous and time-consuming task that can produce inconsistencies. Julabo has taken the difficult work out of sous vide, so you can serve exceptional, high-end restaurant fare in your home.
