A French term for “under vacuum,” sous vide is a slow-cooking process used by gourmet restaurants. Food is sealed in an airtight plastic bag and heated in a low-temperature water bath for a prolonged period of time. The resulting texture, taste and appearance are superior to traditional cooking. Meats, poultry, seafood, fruits and vegetables are just a sampling of the foods that can be cooked in this manner.
