Sous Vide ED-27 Open Heating Bath Circulator
This unit combines the heating immersion circulator and water bath for cooking sous vide. A French term for “under vacuum,” sous vide is the process of cooking food sealed in an airtight plastic bag in a warm-water bath for a prolonged period of time. The water bath is the vessel that holds the water that the food is cooked in. The heating immersion circulator has three main functions:
  • Heats the water bath with the heating element
  • Controls and maintains the temperature with the thermometer
  • Circulates the water to keep a consistent temperature throughout the bath with the pump
Bath tank holds up to 7 gallons (27 liters) of water and is made of high-quality stainless steel. The insulated bath mantle keeps your water bath at the appropriate temperature.

The heating immersion circulator is mounted on a bridge that connects to the bath tank. Immersed parts are made of high-quality stainless steel, so they won’t rust. The pump system gives optimum water circulation, so temperature is even throughout—no hot or cold spots.

Bright LED temperature display is easy to read. The heating element has a temperature range of 68°F–212°F (20°C–100°C) with an adjustable high temperature cut-off for safety. The temperature control uses three basic mathematical functions to ensure that you receive the most accurate temperature in your water bath within 1°F (0.03°C). You can heat your immersion circulator to the exact temperature you want it to be, unlike a pan. The danger of overcooking is far less likely with a larger window of time to remove food from its bath. Made in Germany.
