When cooking sous vide, the heating immersion circulator heats the water bath with the heating element, controls and maintains the temperature with the thermometer and circulates the water to keep a consistent temperature throughout the bath with the pump.
This heating immersion circulator is for 13.2 gallon (50 liter) bath tanks and is equipped with a clamp that fits onto tanks with a thickness up to 1". The clamp allows for hassle-free fitting on both new and existing tank models.
Pump speed can be electronically adjusted with the advanced Smart Pump for optimum water circulation based on the size of the bath. Water temperature stays even throughout—not hot or cold spots. The early-warning system alerts you when water temperature is too hot or cold, or when water level gets low. Immersed parts are made of high-quality plastic and stainless steel, so they won’t rust, and have an immersion depth of 6½".
The heating element has a temperature range of 68°F–392°F (20°C–200°C) with an adjustable high-temperature cut-off for safety. The temperature control uses three basic mathematical functions to ensure that you receive the most accurate temperature in your water bath within 0.34°F (0.01°C).
Clear, bright VFD temperature display is easy to read, even from long distance and at an angle. Control the unit, timer and up to 10 program steps from the keypad, or use the RS232 interface (requires RS232 cable; available as an accessory) to monitor and control the circulator from a computer.
Features a connection for the Pt100 Core Temperature Sensor (available as an accessory) so you can measure the interior temperature of food. Using the Pt100 Core Temperature Sensor, this model can be set to hold or stop once your desired temperature has been reached in the vacuum-sealed bag. Made in Germany.

A French term for “under vacuum,” sous vide is a slow-cooking process used by gourmet restaurants. Food is sealed in an airtight plastic bag and heated in a low-temperature water bath for a prolonged period of time. The resulting texture, taste and appearance are superior to traditional cooking. Meats, poultry, seafood, fruits and vegetables are just a sampling of the foods that can be cooked in this manner.
