Harvested only on certain days in summer at the ideal junction of sunlight and humidity when a white bloom—le fleur or “the flower” of salt—appears on the water in French salt marshes (for use in traditional salt grinders). 4¼-oz. Sel Marin - Sharper and bolder in flavor than Fleur de Sel, it is gathered in salt marshes of the Atlantic ocean in Brittany, France.
