If you enjoy making pizza, this relatively inexpensive tool is indispensable. A pizza stone is a large, round or rectangular terra-cotta or stone slab for baking pizza or bread. You place it on the lowest rack of the oven, turn the oven on, and the stone preheats along with the oven, to approximate the radiant heat of the brick-lined ovens found in pizzerias and bread bakeries. When the pizza is slid onto the hot stone to bake, the stone distributes heat evenly throughout the pie and absorbs the moisture from the dough, to create a crispier crust. Look for a thick, heavy stone that will resist cracking.
