Aebleskivers

Makes 25 cakes

A traditional Scandinavian dessert, Aebelskiver is a close relative of both crêpes and pancakes.

Ingredients

  • 4 eggs, separated
  • 4 tablespoons sugar
  • 6 tablespoons butter, melted
  • Grated lemon peel (to taste)
  • 1½ cups buttermilk
  • 1½ cups flour
  • ½ teaspoon baking soda
  • 1 teaspoon cardamom

Procedure

  1. In a medium bowl, beat the egg yolks with the sugar and melted butter. Add lemon peel and buttermilk. Stir well. Add flour, baking soda and cardamom. Stir until smooth.
  2. In a separate bowl, beat the egg whites until they are stiff. Fold the egg whites into the batter until they are just incorporated. Heat the Aebelskiver pan to medium hot and brush each cup with melted butter or vegetable oil. Fill the cups half-full with batter.
  3. Cook 3 to 4 minutes, watching for bubbles as you would with pancakes. Flip using a skewer or a knitting needle. Cook on the other side until golden brown. Serve warm dipped in powdered sugar or jam.
