What You Will Learn

Every good Italian dinner begins with a great antipasti. Traditionally an antipasti platter may include cured meats, olives, pepperoncini, mushrooms, anchovies, artichoke hearts, various cheeses and vegetables. The practice stretches back to medieval Italian times, when diners mingled over finger foods before sitting down to eat. The aim of antipasti is to excite diners rather than sate them, so that they are inspired for the main courses. In this class we will explore this spirit of culinary generosity as we make antipasti classics from northern to southern Italy as well as try a few American interpretations.
