Ingredients
- 8 oz feta cheese, crumbled
- ¼ cup + 2 tbsp Greek yogurt
- 1/2 small roasted beet, peeled and chopped
- 1 tbsp honey
- ½ tbsp lemon juice
- 2 small garlic cloves
- 2 tbsp olive oil (plus more for drizzling)
- Salt & pepper, to taste
Procedure
Add all ingredients to a food processor and blend until smooth, creamy, and vibrant pink. Taste and adjust with extra honey or lemon juice if desired.
Serve in a dip bowl and use the back of a spoon to make pretty swirls. Drizzle with olive oil and serve with a variety of crisp veggies and crackers or pita bread.
