Cocoa Chocolate Chip Mint Cookies

Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar
- 1¼ cups unsalted butter, softened
- 1 tsp. vanilla extract
- 3 eggs
- ¾ tsp. peppermint extract
- 1½ tsp. baking soda
- ½ tsp. table salt
- 3 cups all-purpose flour
- 1¼ cups cocoa powder
- 1 cup milk chocolate chips
- 1 cup semi-sweet chocolate chips
Procedure
Preheat oven to 325°F.
Cream butter and sugar together in a stand mixer until light and fluffy.
Add eggs one at a time. Scrape bowl when finished adding the last egg.
Add vanilla and peppermint and mix together.
Mix flour, baking soda, salt and cocoa together in a separate bowl.
Add flour mixture to butter-sugar mixture.
Once combined, add in chocolate chips until incorporated.
Scoop 2.5-ounce balls onto a nonstick bake sheet and flatten halfway. Bake 15 to 20 minutes, until light golden brown in color.
