Fresh Minty Pea Pesto Pasta

Ingredients

1 lb pasta
10 oz fresh peas
1 clove garlic
1 cup fresh parsley
1 bunch fresh mint
3/4 cup olive oil
1/2 cup fresh basil
1/4 cup pine nuts
2 tablespoons parmesan cheese
Juice from 1 large lemon
1/2 tsp salt
1 ball burrata

Procedure

Cook the pasta in a large dutch oven according to the package instructions. Reserve 1 cup of water.

Make the pesto by combining the ingredients in a food processor and blending until smooth and creamy.

Add the pesto to the cooked pasta and add in the reserved water as needed.

Top with burrata and serve!
