Inspirational
This pasta class was extremely helpful and very, very inspirational. Chef Joel does a great job providing clear instructions and passes along a tremendous amount of helpful tips along the way. He also makes things that previously seemed complicated and unattainable now seem easy and doable.

I've always thought tortellini seemed very difficult. When I first watched Joel put them together in this class, I was still a bit intimidated. But then I watched the student in the class make some mistakes and learned a ton as Joel gently showed her how to get it done. All the sudden it seemed way more doable. So doable, in fact, that my 11 year old son and I decided to give it a try (see photos), and we nailed it! It was a big hit with my wife and daughter and we'll be making plenty more.

I highly recommend this class. Making your own pasta is super fun and fresh pasta tastes SO MUCH better than store bought.

Amazing energy, and delicious recipes!
The energy from Joel, and the connection between him and his student, make this cooking class what it is!

After seeing the pasta recipe (only four ingredients) I thought it would be easy enough to do on my own, so why buy the class? But the class was so much fun, I found myself watching it on my tablet while I cooked other things! The hands-on techniques, and the repetition, make it so easy to repeat what you see in the video in your own kitchen.

I always thought I needed a bunch of tools to make the dough, but Joel's easy "cutting board" technique was amazing, and the clean-up (or lack of) was the best part.

Easy to follow, simple instructions
Great course! I feel like I can really follow along with the pace. I also like that I can go back and review whenever I'd like. I feel confident that I could make my own pasta now and make my nana proud.

Try this class!
What a fun class! We had a great time learning the art of pasta making with Joel! He teaches you the fundamentals as well as a bunch of tips and tricks that you wouldn't get in a recipe book. I highly recommend trying this online cooking class.

Great class and very easy to follow!
I thoroughly enjoyed watching this introduction to pasta making course. I found it very easy to follow and Joel to be very thorough in his explanations. I look forward to watching the other classes in this series and getting to it in my own kitchen.

Two years ago after a visit to Italy I promised myself that I would learn to make pasta.....It's time!!! Since there aren't any classes at the Sur la Table in Saint Louis, this online class seems perfect!

Do you need a pasta machine for the online pasta cooking class?

BEST ANSWER: You could passively watch the class without a pasta machine, but to work along you'll need at least a manual, hand cranked pasta rolling machine. Chef Joel also shows how to use the Kitchen Aid pasta attachment.
What equipment do I need for the online pasta class?

BEST ANSWER: I have not watched the entire course yet but it appears that some parts just need a sharp knife. But there must be a pasta machine in the directions because I have seen a sheet of flat dough. I would guess that you could roll out the dough (not as flat perhaps?) and cut the noddles by hand.
Does he show you how to substitute ingredients? For instance, for the tortellini filling, he uses a goat cheese filling and I don't like goat cheese, can I use something else?

BEST ANSWER: Hi Heather, this is Joel the Chef from the class! Great question, and thank you for asking. You can sub in ricotta cheese, that has been strained for one hour. I also love farmers cheese which can be found in most places. Don't forget you can always grind cooked vegetables in a food processor (butternut squash, pumpkin, mushrooms etc..) and stuff your tortellini with those:) Happy cooking!
Chef Joel, Is it possible to make the pasta without egg (egg allergy) while doing the class? I use egg replacer for baking, never have been sure what to do about pasta.

BEST ANSWER: Totally possible, in fact lots of pasta is made with just water and flour. Look up recipes for orchiette as traditionally this is a pasta made without egg.
Three questions - 1. Which attachments would you suggest for kitchen aide? 2. What flour is best to make homemade pasta in your class? 3. Have you used dairy free cheese (like Daiya Cheese) in your class?

BEST ANSWER: For pasta making, I would recommend all the attachments for the kitchen aid. The best flour is called 00 flour. I have never used dairy free cheese, but I would totally give it a try.

BEST ANSWER: After registering, you can review the class recipes by downloading the class and opening it. You don't have to view the instructional video, but you're able to print the recipe and all of the items you will need, including kitchen equipment.
Can you use whole wheat flour to make your pasta?

BEST ANSWER: Hi There, this is Joel the chef from the class. You can make whole wheat pasta at home. Note because whole wheat flour is much more dense, most recipes have you mix in all-purpose flour to balance the texture. My favorite is a ratio of 1:1 WF flour to AP flour. Hope this helps!
How long do you have access to the class and can you watch it several times or just a specified date and time?

BEST ANSWER: In my experience, once you buy the on-line class, you can access for as long and as many times as you like. I have a half-dozen of them and can access them through my log-in anytime I wish to review any part or all of a course.
What kind of pasta is shown in the class ? Ravioli? Tortellini?

Very enjoyable to watch all the videos.
What about gluten free pasta? Do you have a flour mix & recipe you'd recommend before I start the course?

BEST ANSWER: We have this cup for cup gluten free flour that is a great option. You can measure literally cup for cup in replacement of what is called for regular flour. http://www.surlatable.com/product/PRO-1365634/Cup4Cup+Gluten+Free+Flour
