Ultra Sharp
I have tried many different brands of Knives and own Shun's also. These knives top all others I have tried. Slicing is effortless. Wash and dry them after each use. If you think you will not like the patena that will appear on all carbon knives I suggest you order the Carbon Steel care kit.

BEST ANSWER: Depends how much time you want to invest in your knives... There is significant oiling and general care issues associated with the carbon steel knives to keep them looking great. I personally love my Bob Cramer Carbon Euroline knives and am willing to invest in the upkeep of them. Stainless steel is easier to care for but if you want to be a culinary "baller" get the carbons and don't look back. FYI, I purchased an additional 8 inch stainless steel chefs knife for those days I don't want to go through the hassle of cleaning and re-oiling my carbons. I suggest you do the same if you get the carbons.
