Specially designed to smoothly and easily cut roasts and other dense foods, the blade features a granton, or hollow edge, which prevents the meat from sticking. Handle is triple-riveted and the stainless steel blade is precision-stamped in Germany.

Do a lot of BBQ/smoking on grill & needed a good slicing knife. Have had excellent results with Wusthof in the past & expect more of the same. A good knife is like any other good tool, don't abuse it & it lasts a lifetime.

Is the Granton edge only on one side of the knife? If so, which side?

BEST ANSWER: The ovals are on both sides of the blade, and are staggered.
What is difference between meat slicer (4511) and super slicer (4532)?

BEST ANSWER: The thickness of the blade. The super slicer is great for meats, but maybe a little too thick for slicing a big piece of smoked salmon.

BEST ANSWER: Dear Spring T. The Wüsthof Gourmet Hollow-Edge Slicer that I bought was 4519-1/36cm and was described as a brisket slicer. The model shown in your question looks very similar, if not the same, as the once I purchased. It's a versatile slicer, and I use it primarily for smoked salmon. Regards, Jim
Would the hollow edge knife be good for slicing smoked salmon ( lox)?

BEST ANSWER: Yes. The great thing about the hollow edge is it's helps prevent food from sticking to the knife. It would be really helpful when slicing an oily fish like salmon.
