Over time, copper can change color through use; however, this will not change the conductivity of the copper material. Never clean with bleach or steel wool. This can lead to irreparable damage. If food sticks to the inside, soak it with hot soapy water. To restore the shiny copper surface to your Mauviel pots and pans, use Mauviel Copperbrill Copper Polish.

This pan is a dream for candy making.
The pan works perfectly. No hot spots or burning on the bottom. nice even bubbling on the candy surface. Indulge in a specialty pan. i received a Mauviel jam pot as a gift a few years ago and i am amazed at the difference it makes.

My cookware collection lacked a small saucepan with pouring spout for boiling milk for one cup of chai tea, for example. I had to purchase the induction interface disk for it to work on my induction cooktop.

This should be perfect for heating milk up for hot chocolate!

I make a lot of confectionary at home. Caramels, brittles, pralines etc. I also make jams and recently splurged on a Mauviel jam pan. The difference was noticeable. Enough so that when candymaking season came around, I promised myself an early Christmas present of the Mauviel sugar pan so that I could use it to make everyone else's Christmas presents this year. As always, the price at Sur La Table is excellent and I know the packaging and shipping time is the best too.

For making english toffee. I make a lot of it. I have a pan made under the Sur La Table name but you no longer carry it. This one is a good price and has free shipping.

what is the weight of 3.7qt pan?
A shopper on Feb 15, 2015
BEST ANSWER: 2lbs 3oz
Is there a hole for hanging?
Delia H on Jun 6, 2018
BEST ANSWER: No. There is not a hole for hanging. Also, the handle gets quite hot. I wrap it in a heavy silicone pot holder before I use it. The generous spout is a welcome feature.
Is it safe to use a copper pot with no stainless steel lining? Use it only for recipes with lots of sugar ? Use for everything ?
A shopper on Sep 30, 2017
BEST ANSWER: The pot's manual states that you should not use wine, citrus or tomatoes in the pot because the acidity will affect the surface. That rules out a lot of preparations, unfortunately. I find that, aside from the sugar melting, I use it for heating milk for recipes and hot cocoa, and for melting butter.
Does the handle become hot? Thank you.
timothy P on Jan 30, 2016
BEST ANSWER: The handle due to its design does not get "hot" to the touch. Grip farther up the handle and it is comfortable to the touch.
