- Special-Care Instructions: Copper is an exceptional material for kitchen use. Maintained properly, your copper cookware will last for generations. Before first use and after each use, carefully wash with hot soapy water then rinse and dry. Over time, copper can change color through use; however, this will not change the conductivity of the copper material. Never clean with bleach or steel wool. This can lead to irreparable damage. If food sticks to the inside, soak it with hot soapy water. To restore the shiny copper surface to your Mauviel pots and pans, use Mauviel Copperbrill Copper Polish.
- Use: Broiler, freezer and stovetop safe. Oven safe to 680°F

Perfect pan to make caramel
I used to burn my caramel all the time... but not anymore! This pan is melts sugar like nobody's business!

This pan is a dream for candy making.
The pan works perfectly. No hot spots or burning on the bottom. nice even bubbling on the candy surface. Indulge in a specialty pan. i received a Mauviel jam pot as a gift a few years ago and i am amazed at the difference it makes.

Christmas gift for my baker daughter

what is the weight of 3.7qt pan?
Is it safe to use a copper pot with no stainless steel lining? Use it only for recipes with lots of sugar ? Use for everything ?
BEST ANSWER: The pot's manual states that you should not use wine, citrus or tomatoes in the pot because the acidity will affect the surface. That rules out a lot of preparations, unfortunately. I find that, aside from the sugar melting, I use it for heating milk for recipes and hot cocoa, and for melting butter.

Does the handle become hot? Thank you.
BEST ANSWER: The handle due to its design does not get "hot" to the touch. Grip farther up the handle and it is comfortable to the touch.
