Care & Usage Show

  • Hand wash; never use steel wool or bleach; if food sticks to interior, soak pan with hot soapy water
  • Use Copperbrill cleaning paste (sold separately) to restore the brilliant shine of your copper cookware and keep pans looking like new
  • Compatible with any stovetop heat source, except induction; make pan induction compatible by using Maviel’s M’plus induction interface disk (sold separately)
  • Oven and broiler safe to 500°F

Beautiful pan - excellent cooker
The pan has done an excellent job of cooking everything I've used it for from scrambled eggs to lamb chops. Easy clean up.

I love to cook, and I cook a lot. I am slowly building a set of copper cookware. I prefer copper because of the way it distributes the heat and cooks the food. And, it is beautiful!!

I'd like to try just one copper pan to try out its heat conductivity. Mauviel is well known and the 250c is a classic look of their best quality. The 10" size is about the perfect skillet size for me too.

What is the max heat for mauviel copper pans?

BEST ANSWER: Mauviel copper is heat safe to 460°.
When a fry pan is said to be "8 inch", "10 inch", "11.8 inch" etc, is that measuring the food surface area or the distance apart of the flared sides?

BEST ANSWER: The measurements of the Mauviel skillets are at the top (widest part) of the pan.
How heavy are these pans?

BEST ANSWER: The 10.2 inch pan weighs a tad under 4 1/2 lbs. That said, it is a wonderful pro-level skillet--responsive and easy to clean. The extra weight means that the heat diffuses so that it is hard to scorch anything inadvertently. It does cook differently than the lighter Mauviel, but both versions are excellent quality. So if the weight is a problem for you then you will still be happy with the 1.5. I use both.
What is diameter of the cooking surface on the bottom of the skillet?

BEST ANSWER: The 10.2" skillet measures just a bit under 8" on the flat bottom surface.

BEST ANSWER: Your average cooktop ranges in temperature from 200° to 500°. Since it's heat safe to 460° I would keep this skillet around medium high at the most.
