"Wow, Super Sharp!"
I love this knife. I just picked it up a few days ago at my local store after seeing it in the catalog. I have a drawer filled with great knives, but love to try the newest thing. This knife seemed too good to be true. It is a killer price for a Japanese blade, but the same quality of my other favorite Japanese brands. Super value!

The blade is extremely sharp and lightweight, plus it's less fussy looking than my other Japanese knives. I love that it looks German, but performs like a Japanese blade. I've already put it to the test over a long weekend of cooking and it's my new favorite for sure. I love to cook and a sharp, comfortable knife is important. I really enjoyed it so much it will be a gift this Christmas for my brother the cook!

Best Knife ever
I used this knife in a Sur La Table cooking class and loved it. I got it as a Christmas present because I talked about it so much. It has great balance and is not too heavy for my hands. I like the 6 inch better than the 8 inch for cutting veggies. I don't eat meat so don't use it for that.
This is a beautiful, sturdy knife.

This is the sharpest knife in the drawer, and it holds its edge for a long time. It is a joy to cut vegetables with this knife.

Fantastic chef's knife
I'm shocked there are so few reviews here. I bought my Miyabi Evolution 8" Chef's Knife not long after they appeared at Sur La Table. I had gone in to try out knives and this was very much my Goldilocks knife -- it's just right, and as soon as I tried it I was in love. For me, the German knives were too heavy and unwieldy, the Globals were too bizarrely lightweight, and the perfectly round Japanese handles just felt wrong in my hand. This Miyabi, however, was perfect -- mid-range weight, remarkably comfortable handle (particularly for my petite hands), and simply beautiful construction. I'm still in love with it to this day; it's easy to clean and maintain and it holds its edge. Can't recommend it highly enough.

Best knives!
These are my favorite knives and I've had a lot of them! I loved them so much I bought one for my son who is a much better cook than myself. They hold an edge for longer than most.

Amazing knife
Amazing knife. Razor sharp and accurate cuts. Edge has held up well. Only complaint is that it didn't come with a sheath or storage box so I store it in the original packaging. For a knife at this price point, you'd think it would have something for storage and blade/edge protection that comes with it.

Yay, sharpness!
It's been awhile since I've had a sharp knife in the kitchen; this one has a nice weight in the hand, easy to control and I'm (finally) starting to lose the callous bump I got on my index finger from my previous knife. Highly recommended.

I was looking for a new chef's knife and the Miyabi Evolution ticked all of my boxes. Japanese FC61 steel (basically AEB-L) so it'll hold an edge without being super brittle. Ergonomic handle so it was equally comfortable using a pinch grip or a handle grip. A bit thicker than a typical traditional gyuto so it's a nice Japanese/German hybrid.

BEST ANSWER: the blade itself is 5 cm wide. The distance from the underside of the handle to the edge of the blade is 3.5 cm. Hope that helps
Honing with steel?

I'm new to nice cutlery and recently purchased the 8"" evolution. Love the knife! I've been doing some reading and it seems there are mixed feelings on honing Japanese knives with steel. What do you recommend with this knife?Additionally, your in-store employee only recommended getting the knife sharpened every 6 months or so. Is this correct

BEST ANSWER: I've never heard of steel being an issue as long as the honing steel is stronger than the knife blade, but I do know some people prefer to honing with ceramic. It's really a matter of opinion.As far as sharpening goes, once every 6 months should be plenty.A rep from Zwilling once used a really good hair analogy to explain how often you should hone and sharpen your knife. When you hone it, you're just maintaining the straightness of the blade, whereas sharpening actually removes a little bit of steel when you do it. So it's like brushing & cutting your hair. Since you brush your hair every day but you only cut it occasionally, you should hone your knife regularly but only sharpen it every so often
Could someone speak to the pros and cons of Miyabi Evolution vs. Koh Chef's knife?

BEST ANSWER: I can't speak to anything about the Koh since I don't have any but oh boy do I love the Miyabi Evolution. A knife is obviously very personal as related to feel and weight etc. I used every single knife in the store before I bought. The Miyabi was hands down my favorite! The feel, sizing, grip type, weight, hand position, etc. I've got a paring, utility, santoku and a chef which easily meet my needs though I pretty much use the santoku for damn near everything including opening napkins.
Regarding the sharpness of the blade: Is 22 - 24 degrees the edge angle (only one side) or the included angle (both sides)?

BEST ANSWER: The blade is 11" per side, or an included angle of 22". That being said, the angle can actually be a little off at 9-11" per side, with an included angle of 18-22".The hardness is 61 (HRC61) on the Rockwell scale for hardness
I bought a Miyabi Chef's knife a few months ago at Sur la Table. It says 400FC on the back side. Also says FC61 steel. I threw the box away. This may seem like a dumb question, but is it an Evolution knife? I was thinking of picking up some more but wanted to be sure they are the same. Fantastic knife, almost freakishly sharp.

BEST ANSWER: If it's smooth like this picture, then yes, it's a Miyabi Evolution knife. The other Miyabis have kind of bumpy blades. We really like our Miyabi Evolution knives and they are extremely sharp.
Can someone recommend a sheath for the 8-inch version of this knife?

I purchased Miyabi's wooden 8-inch chef's knife sheath, but it does not seem to be compatible with this knife. I'd like a nice wooden or leather sheath, if possible

BEST ANSWER: We do not carry any other wooden or leather sheaths, but I think the Messermeister 2 x 8 or 2 x 10 would work.

BEST ANSWER: You can sharpen this knife like you would any other — either bring it into a store like Sur La Table to have them do it or use whetstone to do it yourself. Just make sure you use a honing steel often to keep the knife's edge between sharpening (every 6 months or so w/ heavy use).

Please clarify the blade angle on the Miyabi Evolution 8"" chef; i.e., is it 11-12 degrees per side?Re: sharpening: I have the Global 7"" santoku, 5"" santoku, serrated utility and 4"" paring plus the Miyabi 6"" fusion rocking chef. Yesterday, I bought the Miyabi Evolution 8"" chef and 3.5"" paring knife in Palo Alto. I was going to buy the Minosharp knife sharpener because I was mostly Global. But now with 4 Globals, one Fusion Miyabi and 2 Evolution Miyabis, what is my best sharpening solution given the differences in blade angles? I'm not sure if I'm ready for a wet stone, but will go that route if needed. Note: I live in HI, so can't bring knives into a store for free sharpening

BEST ANSWER: Global knives are usually 15 degrees each side (30" inclusive), and the Miyabi Fusion blades are 11 degrees each side (22" inclusive). Normally a degree or two inclusive is not a deal breaker for sharpening, but 4 degrees each side is quite a lot.I hate to say it, but the best plan of attack may be to get a separate sharpener for both if you want to go the handheld route. Otherwise the best option may be to get a whetstone with some guide rails. The guides can be adjusted so you get the correct angle for both the Global and Miyabi. Yeah, it's not as easy or fast as a handheld wheel, but these knives should not need to be sharpened as often. But when you do sharpen them using a whetstone, they will hold the edge a lot longer - 2-3 times longer! - than you could get using a handheld.Note: Don't try and get us to feel sorry for you living in Hawai'i. After this winter, I think everyone on the mainland would trade places with you. Pomaika`i ;-

BEST ANSWER: The height of the blade at its widest point, at the heel near the handle is 2&1/32 inches. I like this knife a lot. You will find it holds its edge very well. This knife slices so smoothly. My other chef knife has a spine that is almost twice as thick. This one slices like a razor. The other cuts but splits fruit & veggies more lie an ax.
Does anyone know how does this knife's width compares to the wusthof cook's knife width? I have the wusthof cook's knife and even though I like it, I miss having a wider/heavier blade... Thanks!

BEST ANSWER: The blade is 1 7/8 inches wide at the handle end. That is wide for a 6 1/2 inch blade but the width gives ample room for your knuckles when chopping.
FYI the balance is awsome! Great kniife. Super hard steel blade sharpened at 11 deg instead of 22.5 deg makes it razor sharp and it holds its edge well. I love my Sabatier's but this is the knife I bought for my wife who refused to weild the longer, bigger chef's knives. She was always handicapped by the narrower blades on the smaller ones she preferred to use for prep and chopping. She loves this one, and so do I, that is when I can "borrow" it from her. the step up from a Wusthof will astound you. Don't hesitate!
What is the actual length of the cutting edge of the 8” Chef’s Knife — the distance from tip to the base of the heel, measured with a ruler or tape measure? For instance, my 8” Four Star Chef’s Knife measures just under 8.25” from tip to the back of the bolster where it meets the edge.
