BEST ANSWER: This makes 1/4" noodles.
Is there a video on how to use this? I bought in store and there aren't directions on the packaging.

BEST ANSWER: Thank you for your email. I am happy
to share what techniques I use, but
may or may not be best for everyone.

So, I will mention also that one can get
excellent recipes off the internet--which
will lead up to the techniques,
to include how to make authentic
Italian Pasta--using flour, eggs, water
and a little bit of olive oil with spring
water. The pasta cutter is used once
the pasta ingredients are blended,
kneaded, allowed to rest, then rolled
out. (The cutter is rolled across the
sheet of pasta, when it is "flexible" and
elastic).

I have made pasta, several different
ways. I like modern technology in
kitchens, but wonderful pasta dough
can also be made authentic style,
by hand.

The Kitchenaid Dough Hook works well,
as does a food processor or pasta
machine--depends on batch size.

Elasticity. Running dough through pasta
sheet machine, set at a desired setting
for thickness. Another tip I have
learned is that boiling water activates
the gluten in the flour, in the kneading
stage, facilitates al la dente results.
I have used a Cusinart Food Processor,
kneading plastic blade as well.

Size of batch can depend on machine
one uses. Also, there are people
who like to use half semolina and
half all purpose flour. The authentic,
knead dough by hand.

The main success point is to work
and rest the pasta dough enough so
when the dough is either rolled by
roller or a pasta making machine, that
the sheets become pliable, al la dente,
elastic, somewhat stretchable.

Once you have the pasta sheet at a
desired thickness, flour pasta sheet and
the roller, run the tagliatelle pasta
cutter across the pasta sheet,
to cut the pasta. (Flouring is
important to keep pasta from sticking
together).

In a boiling pot of water, drop the cut
pasta in and cook it to al la dente. I
like to add just a little oil to water.
Drain when cooked--al a Dente style,
Enjoy it with your favorite sauce.
