Good enought for ATK!
Great pan - saw this two days ago on America's Test Kitchen and had to have it.
They were right - deep grill lines and wonderful carmelization (sp?) and clean up was easy. The 10"" pan is the perfect size for my glass top stove; and the enamel on the exterior keeps the pan from scratching.

Love it
I have an induction cooktop and unfortunately the scan pan grill pan will not work on it (I have the scan pan set). This will and is a wonderful size for fitting on the cooking area. It cleans up easily as well.

Are there better pre-heating instructions for cooking steaks, etc.? What temperature can it be used in an oven? The print in the manual is too small to read in places and uses symbols I don't understand. I just bought this pan and there are no instructions on how long to preheat the pan to grill a steak, etc. to use oil or not. Staub website did not give any additional information on how to cook with it. I know it says to warm slowly, but I would like explicit instructions. There are conflictiing statements as to preheat with or without something in the pan (e.g. oil).

BEST ANSWER: I was also unable to find any specific information on the Staub website, but here are some helpful instructions I found elsewhere:
Grill pans need to be heated to a hot surface temperature to create a good sear. For the best grilling results, it's important that your grill pan be sufficiently hot before you begin cooking. Only by reaching the right temperature can you produce sear lines from the ridges of the pan. If your food is too wet or the grill too cool, you will not achieve a good sear & your end result may look & taste steamed. Here are some tips to optimize the use of your grill pan:
Be sure to preheat your pan dry. Oil added to a cold pan will likely produce smoke.
After you have preheated your pan, sprinkle a few drops of water into it. If they steam but don't sizzle, continue to heat the pan a little longer. If they sizzle & evaporate almost instantly, your pan is ready to use.
Once your pan is preheated, brush a thin layer of oil onto it. Please note that olive oil is not recommended for a grill pan due to its low smoke point.
When grilling & searing, food needs to be quite dry. Take paper towels & pat away any excess moisture, including marinades you may have used. You can brush on a little oil if you prefer.
For the best grill marks, be sure to leave your food undisturbed for several minutes after placing it on the grill.
If you choose to finish in the oven, this grill pan is oven safe to 500°.

BEST ANSWER: The version I ordered did not have a lid, and I don't know whether one is available for it. I ordered a press, which is a square of the same construction as the pan, with ridges. Although it main purpose is pressing wraps, if you heat it with the pan it will speed cooking things like steak, partly by keeping the lower surface of the steak pressed against the pan.

How do you clean the cast iron square 10 " grill pan from Staub?

BEST ANSWER: This pan is very easy to clean. Soak it in warm soapy water for a few minutes and stuck on food comes right off. I use a soft brush so the surface doesn't get scratched.
Can I use this in a gas broiler?

BEST ANSWER: I don't think so. As I recall, the instruction sheet that came with the pan said not to use it above 500F. I think because that may damage or crack the porcelain coating. A plain (uncoated) cast iron skillet can be used in a boiler if heated slowly. You should check with the nmanufacturer.
