Description

Inspired by the simple carbon steel cookware used throughout France, Mauviel’s M’steel collection represents a return to the roots of cooking. Featuring exceptional heat transfer and the ability to be preheated to extremely high temperatures, M’steel cookware is perfect for searing, browning, stir-frying and more. Constructed from extra-thick carbon steel with riveted steel handles, this heritage-quality cookware will endure a lifetime of use. Wok features curved sides for easy tossing and sautéing.

Features Hide

  • Carbon steel features excellent heat conduction at a fraction of the weight of cast iron
  • Heat safe to high temperatures, allowing extra-long preheating for excellent results when searing or browning
  • When properly cared for, carbon steel becomes increasingly nonstick with each use
  • Extremely durable, commercial grade carbon steel is safe for use with metal utensils and will not retain flavors or odors
  • For use with all cooktops, including induction

Specifications Show

  • Manufacturer: Mauviel
  • Material: Carbon steel
  • Dimensions: 24.7" x 11.8" x 3.8"
  • Weight: 5 lb. 14 oz.
  • Warranty: Limited lifetime warranty
  • Made in France

Care & Usage Show

  • Hand wash with warm water only immediately after use. Dry completely. Wipe with oiled paper towel and store in a dry place. Carbon steel will change color and develop a patina with use—this is natural and does not negatively affect the pan’s performance
  • Oven safe to 680°F
  • Special-Care Instructions: M’steel cookware ships with a beeswax coating that must be removed prior to use. To remove coating, scrub with hot, soapy water. Pan must be seasoned to prevent corrosion. To season, dry pan completely after cleaning, then wipe with a thin coat of flavorless cooking oil. Heat until oil liquefies, then turn heat off and wipe off excess oil. Repeat as necessary

Superior Carbon Steel Wok
Very substantial and nicely finished, and made in France. Thicker and heavier than any other wok of this type I've handled. Thick, triple-riveted handle looks bullet proof. The wok's lip is ground and polished in a manner not seen on less expensive woks. Looks like it should last decades. Beeswax protective coating (which is easily removed after purchase) makes new product appear a bit rougher than it actually is.

I have lots of Mauviel copper and just love it. Thought I'd give their carbon steel a try and I needed a wok and crepe pan!

What is the texture of the inside? Smooth, or are there grooves along the sides?
A shopper on Jan 17, 2016
BEST ANSWER: The surface is pretty smooth on the one I got today. Less groove texture than typical for carbon steel woks.
What is the diameter of the wok?
A shopper on Jun 22, 2017
BEST ANSWER: 12 1/2 inches
Hi, I would like to know how thick is this wok. 1.5 mm ? 2 mm? More?
A shopper on Sep 13, 2018
BEST ANSWER: My sample is 2.15mm thick at the edge, measured with a digital caliper. It is significantly thicker and heavier than any other carbon steel wok I've seen, and much better finished too.
Can I use this on induction cooktops?
Gabriel C on Jul 8, 2015
BEST ANSWER: Yes, though the bottom disc diameter (the flat portion of the pan) is only 5.5 inches. If your induction coil extends much beyond five inches you're going to have a rough go of it.
Does the handle get hot?
A shopper on Sep 18, 2017
BEST ANSWER: I haven't used mine a lot, but the few times I have it has not gotten hot.
How heavy is this wok?
ALAN L on Mar 19, 2015
BEST ANSWER: Just short of six pounds. It handles well despite the weight.
Does this come with a lid? If not, what type or size of lid will fit?
A shopper on Feb 17, 2019
BEST ANSWER: Does not come with the lid, will suggest 12.5" for the lid size.
About the size: In the specifications, it gives 24.7" as the largest measurement, but in the questions, someone said the diameter is only 12.5". Does the larger measurement include the length of the handle? What is the outside diameter of the wok, without the handle? Thanks!
A shopper on Jan 21, 2019
BEST ANSWER: The longer length measurement does include the main handle as well as the “helper” handle on the opposite end.

The outside diameter of the wok is 12.75 inches. This is excluding any handles.

It’s a great wok that does a beautiful job searing foods. It is a bit heavy to manage lifting with food inside using just one hand.

It works best on a gas heat source.

I am glad I have one!

Enjoy!
what is the weight, in lbs. of this wok???
m c on Jan 8, 2016
BEST ANSWER: Mine is 5 pounds, 13.25 ounces.
