Care & Usage Show

  • Hand wash with warm water only immediately after use. Dry completely. Wipe with oiled paper towel and store in a dry place. Carbon steel will change color and develop a patina with use—this is natural and does not negatively affect the pan’s performance
  • Oven safe to 680°F
  • Special-Care Instructions: M’steel cookware ships with a beeswax coating that must be removed prior to use. To remove coating, scrub with hot, soapy water. Pan must be seasoned to prevent corrosion. To season, dry pan completely after cleaning, then wipe with a thin coat of flavorless cooking oil. Heat until oil liquefies, then turn heat off and wipe off excess oil. Repeat as necessary

This was an experiment
This was an experiment, I thought t would hate this pan, but it is great for eggs. Either fried or omelette eggs don't stick. The cheese in the omelette didn't stick. It does take a little getting use to, not washing it with soap, and letting it turn back. I had some push back from my husband, but now he will even use it and just wipe it out with hot water and paper towels. I am going to buy a larger.

Never going back to teflon
i read about carbon steel pans in a cooking magazine and thought i would give it a try since my favorite teflon coated pan was starting to show signs of wear. With one use it instantly became my favorite pan in my kitchen. It's a little on heavy side, but still pretty easy to manipulate and the handle doesn't get hot while it's on the stove top. I can see why professional chefs would use this pan! I'm going to buy one for each of the cooks in my life for christmas this year!

M'Steel
Start on the stove-top and then finish in the oven.

This is my daily go-to pan. You can create a nice brown crust on your meats and it is much lighter than cast iron.

Very easy clean-up.

Love it!
Love cooking with my new pan - prefer using it over traditional cast iron pan. Building up a nice patina from only a few uses and much easier to clean than cast iron using hot water.

I ordered the large skillet and it was too heavy for me to handle. Also, after seasoning the pan, it was splotchy and sticky. If you dried it with a paper towel, fragments of the paper towel stuck to it.

I use cast iron and carbon steel wok. This should be lighter for my wife. We don't like plastic cookware, non-stick, or flimsy junk. Stainless is ok for a saucepan.

I like to use basic materials that have stood the test of time. Carbon steel skillets can be seasoned to a more natural "non-stick" surface and are lighter than cast iron.

This looks like a carbon copy (pun intended) of the Mineral B Element pans - how would you compare the two?

BEST ANSWER: Aesthetically they appear very similar, but their composition is quite different. The de Buyer pan has a 2-3mm thickness & is made of iron, but the Mauviel pan is 1.2-3mm & is made of black steel.
Use & Care for both is almost identical as well. I think when it comes down to it, you have to choose which material you prefer.
Is the measurement listed for cooking surface or overall size of pan. In other words, when it says it's eight inches, is that measured at the surface of the pan or from lip to lip?

BEST ANSWER: I just measured the pan. It is 9.75 lip to lip and 7.5" across the flat part of the cooking surface. It could be 7.75" as you start to come up the slopes a little.

I can't get the beeswax off with warm soapy water as directed in care instructions. Even w the scrubby side of the sponge it stays in tact. Any suggestions?

BEST ANSWER: Fill a large tea kettle and bring it to a boil then slowly pour the boiling water over the pan to melt & wash away the beeswax. Most water heaters have temperature governors on them now so the water cannot get hot enough to accidentally scald so the water from the tap can't get hot enough to melt the wax. Soap won't cut the wax either. May have to sure more than one pot full of boiling water depending on the size of your pan.
To me, a cast iron skillet transmits a metallic taste to the food. Will this skillet do the same?

BEST ANSWER: I have used two different Mauviel M'steel skillets on a number of different dishes, and have never noticed any effects on the taste of the food- definitely no metallic flavor that I could discern.

The pan is very light weight. I can weigh it when I get home if needed, but it is very light. I have cast iron pans as well as many non-stick pans and this is the lightest. My wife exclaims it is her favorite plan at least once a week. We bought two more (different sizes) because we love it so much. I fried eggs in it this morning!! We would recommend the rubber handle cover for better grip and temperature control
Are the. Carbon steel skillets non stick with some oil or butter???

BEST ANSWER: They have to be seasoned first, using the easy included instructions. Mine seems to work better for omelets (really non-stick), but not quite so non-stick yet for scrambled eggs that need lots of stirring. I've only used it a few times, so I'm hoping it will improve over time as I use it more and more (and re-season as needed, occasionally). It's much better than a different brand of black steel pan I tried several years ago - good shape, high sides with a good angle, easy to roll up the omelet and release onto a plate.

BEST ANSWER: Yes. The skillet has a flat bottom with a smooth finish so is fine for glass cooktops.
What is the thickness of these carbon steel pans?

BEST ANSWER: The pans are slightly less than an 1/8 of an inch. The handle is 1/8 of an inch. Not heavy but they can take the heat. Fantastic pans. They are my go to pans for just about everything except cooking with acids. You will no longer need any non-stick pans.

My pan got a couple pit marks and was wondering how to deal with those marks?

BEST ANSWER: I would not really worry. The Pan will pit and darken with use What is most important is that you do not clean it to the point that it loses it's non stick properties. My pan looks mottled but performs well (better than my cast iron).
