The best item in my kitchen so far
I am not a pro at all, just someone learning new tricks; this amazing tool is perfect for me. It is a great chef knife, the slightly shorter length makes it easy to maneuver and you get a great control + comfort on it. It is so sharp and goes thru any fruit, meat or veggie like butter :). I simply love it!

Best knife of my life. I was used to an 8" knife so I knew it would be a challenge to get used to a shorter blade but it's just so beautiful it's worth it. If they came out with a longer one I would buy it in a second. This knife is so comfortable and well balanced. It cuts everything so smoothly and I work in a kitchen. I use this knife for slicing, dicing and even cleaning proteins. It holds a very sharp edge.

great knife
I use this knife a lot--it has become one of my favorites for general chopping, slicing, dicing and other prep work. Also it is easy to maintain a VERY sharp edge with a minimum of attention. It can be a real "newpaper-slicer".

This is my fourth Miyabi Kitchen knife. The quality is superb for the price paid. My wife and I cook frequently, so we appreciate the sharpness and handling for lengthy cutting and chopping episodes - on the weekend we often make four or five meals for the work week ahead to eliminate spending a lot of time in the kitchen after a long day at work.
The Miyabi knives stay sharp due the craftsmanship during manufacturing them. I have good quality stones to keep them at their cutting best.

BEST ANSWER: The spine on this knife is 1/16" wide.
Which knife weighs less: the Zwilling Pro Rocking Santoku or the Miyabi Evolution Rocking Santoku? I couldn't find a weight specification in the descriptions of either knife.

BEST ANSWER: Both of these knives weigh about 9oz. If one of them is heavier, it isn't enough that you can tell a difference.
Is this knife 7 inch? I could not find this information in the product details.

BEST ANSWER: From the tip of the blade to the end of the cutting portion of the blade I measure 7 1/4 inches. From the tip of the blade to the tip of the handle I measure 12 1/2 inches.
My dad is looking for a "long handled knife." How long is the handle on this one? How does it's length compare to other chopping knives?

BEST ANSWER: This is one of favorites knife. It has a German handle I feel like size of the knife is a good fit for anybody and also the length of the knife is good for a lot of different kinds of cutting and chopping vegetables. I like the shape of the blade for dual purpose chopping and slicing. If I had to recommend a knife from my collection. This knife would be my first recommendation for everyone.
What angle do you sharpen the blade to? I have a Wostof sharpener with both standard and Asian blade angles (15 and 10 degrees).

BEST ANSWER: Even though it is a Japanese style knife made by a German company — I would still go with the 10 degrees. That is what I do and the results have been good. Hope this helps.
Is the blade symmetric or asymmetric? How to regularly maintain the knife,I.e. Same honing method as a normal chef knife?

BEST ANSWER: The blade is symmetric; i.e. what you see on one side of the knife is exactly the same on the other side. I have been able to keep a good edge with regular honing, but I have had the knife for only a year. It could stand up to an occasional sharpening stone. I like this knife very much, it has become my go to knife for must cutting and chopping. It has a good balance and weight and goes through potatoes, carrots, squash, and every vegetable and meat product.
What is the hardness level of this knife?
