A Superb Knife!
When I first took this knife out of its container I thought the handle felt awfully heavy. I noticed it has an extra-wide, full-length tang that makes the handle seem so weighty, but I needn't have worried. The moment I took my usual "pinch grip" on the knife (thumb and index finger gripping along the top of the blade just ahead of the bolster) it was in perfect balance. The 7-inch blade was easy to maneuver. It has an exquisitely sharp edge coupled with the granton indentations that just powers through even the toughest root vegetables. That extra weight in the handle helps this knife practically race through every slicing or chopping task. Mushrooms zucchini or other "grippy" type foods just fall away so the blade is clear for the next slice. The pointed tip and super sharp edge make it easy to finely mince shallots, garlic and the like. It also makes it easy to clean the "ribs" and seeds out of the inside of bell peppers. The curved "rocking" shape allows you to rock this knife like the best chef's knife. The quality of materials and workmanship are top quality. It's a terrific new addition to my prep time and will be my go-to first choice in my knife block.

Cuts like a knife!
Purchased the knife as a gift and they absolutely loved it! It's their new favorite knife. Super sharp and handles great.

Which knife weighs less: the Zwilling Pro Rocking Santoku or the Miyabi Evolution Rocking Santoku? I couldn't find a weight specification in the descriptions of either knife.

BEST ANSWER: Both of these knives weigh about 9oz. If one of them is heavier, it isn't enough that you can tell a difference.

Will this knife rust or stain?
BEST ANSWER: No I always rinse the knife, use a cloth to dry. Never in the dishwasher. Handling is very good, balanced and a dream to use.
