My New Favorite Kitchen Tool
I received this pan two weeks ago and have used it at least five times. It is a wonderful size for a small family or for couple cooking if you are cooking two different foods at one time. So far I've cooked thick boneless chops with asparagus, steak with fresh broccoli, salmon with pre-baked sweet potato (split the potato in half, sprinkled w/raw sugar and placed down on grill), and chicken with cauliflower. I think the pork chop was my favorite - awesome flavor and very tender. As far as cleaning, as recommended by a previous reviewer, I use Bar Keepers Friend cream cleaner with a small scrub brush. No problem cleaning. My tip for cleaning though is: as soon as you remove the food from the hot pan, add water and let soak until you are ready to clean. The food particles come right off.

Best gill pan for indoor grilling!
I cook a lot! Ive used indoor grill pans of all kinds and this one really does what is says..You get perfect grill marks and tender and moist meat! You will get smoke if your grilling correctly, so make sure you have good venting. Make sure pan is good and hot and don't overcook and you will LOVE this pan. I probably use it 4-6 days a week. I've even had a indoor grill in my cook top before and this pan does my grilled shrimp with the same results and a lot less clean-up than an entire grill. Use the lid too it keeps the moisture in the meat, even if you don't use a liquid with your recipe :-)

perfectly moist chicken
Just used the Staub Steam Grill for the first time. Love it! Perfectly moist chicken in about 15 minutes, and it was so easy! I used the chicken recipe from the website, and it was excellent.

Fantastic Pan!
I bought one of these this weekend and used it to grill a sirloin steak last night - it was fabulous! This pan gave me a nice sear with no oil. Clean up was super easy - once cool, I just put it in the sink, filled with water and a squirt of dish liquid. After a brief soak, everything just wiped up with a sponge!
This pan is enameled inside as well as outside - this is NOT like traditional cast iron. You can use soap, don't need to season it, etc. All of the "rules" for cast iron do not apply.

Love This Pan!!!!
This is the first Staub pan I've ever owned. All I can say is Wow!!!!
It sears any meat beautifully, that you'd think the meat was done on an outside grill. I've seared in the pan and then finished cooking the meat in the oven. Wonderful!!!!!
After reading the reviews on cleaning, what I've done is let the pan cool a bit, but not completely. Then fill the pan with hot sudsy water and let it sit. Most everything comes right off with little effort of scrubbing. And yes, the glass lid fits perfectly and snugly.

problem solver!
this grill pan is awesome! I love that I can use it as a normal grill pan (even on the BBQ outside) or use it with liquid and the lid to steam grill. Steam grilling is faster and the results are great, plus using the lid means my kitchen won't smell like smoke after grilling inside. Also, no more grease splatters all over the range top. you need this item!

A Disappointment
This product does not perform the way the video implies. Despite following directions, I was unable to get grill marks on the food without splatters all over my stovetop, and several kinds of fish stuck to the grill even though I used olive oil first. And clean-up is hardly "a breeze"--unless you consider ten minutes of scrubbing a breeze. I don't.

We just purchased this but it was the floor model and had no information in regards to how to use it or how to clean it. We just made salmon in it and while it was tasty, we had difficulty cleaning the pan. My husband brushed the fish with a miso butter but didn't add any liquid to the pan, hence the fish was "smoked" rather than steamed. It tasted wonderful but the clean up was not effortless. Any advice?
BEST ANSWER: Once the pan is cool, try filling it with hot water and a couple of pumps of dish liquid. Since it is enameled cast iron, you can use soap, but I would avoid abrasive sponges.

BEST ANSWER: In theory, you can do it with any grill pan that has a lid. What makes the Staub pan ideal is that it's made specifically for this purpose. It has a tight fitting lid & high grill ridges to promote steaming, but still give you grill marks.

what is the weight of this pan?
Does this Staub steam grill also work well just as a grill pan without adding liquid or would the ridges be too high placing the food too far up from the heat source? I use a gas stove. I like the idea of equipment being able to do double duty.

BEST ANSWER: It's not necessarily better than a grill pan, as it itself is a grill pan. Features that make this particular grill pan unique are the tight fitting lid that comes with it, as well as the raised grill ridges. They make it so that a liquid of your choice can be poured in the bottom to create steam that will keep your food moist & impart flavor into it.
The grill ridges will help add a nice char flavor to your food, but it won't get that good, smoky flavor like you would in a grill.

Can wood chips be used to flavor meats in this grill?
BEST ANSWER: I don't think so. It is not a very deep pan and not much different than any other grill pan. While I have many Staub pans (which I truly enjoy using) I don't find this to be much different from any other good grill pan. I am intrigued by your question, however, as I have been researching smoking. I might be tempted to try your idea on a lower end pan to see if it works. I have some old lodge grill pans and I might give it a try. No harm no foul with with an old, inexpensive pan.

I'm torn between getting the 10.5" and the 12" pan. Don't want both, so would you recommend getting the larger pan with the lid because of the option of the lid and it's basically 2 pans in one with the steaming effect? Does anybody have both and which one do they use the most?

BEST ANSWER: In all honesty, I would get the 12" steam grill! Both pans are the same, can both go into the oven up to 500 degrees and both can go onto the cooktop. The 12" is bigger than the 10" and you cannot make a pan grow. And the lid give you options. If money is not the option, I would go with the 12" pan. Love that you can put the gill pan in the oven and get it searing hot and then sear cook a steak and get the outside cooked and leave the center warm and not soooo cooked if you dont want. Enjoy!!

what is the difference between the grill pan with press and the steam grill with lid?

BEST ANSWER: The grill press isn't a lid. It doesn't fit like a lid, it's just meant to press and it won't hold steam in the way a lid would. In the picture it looks like the press fits the top of the pan, but it's actually the size of the bottom of the pan and just sits on top of the food in the pan to flatten it/hold it in place. The steam grill with the lid is a grill pan with a traditional lid that holds steam.

How much smoke is created?
We need something that will not smoke. Our apartment fan recirculates so meat and fish are a problem creating too much smoke. Any info on how much smoke this produces?

BEST ANSWER: It is a steam grill so as long as there is liquid in bottom of pan I have not had any smoke issues. When I use it as a grill then keep a splatter guard or cover on to minimize grease getting on range top

I have a 2 Staub grill pans already. Could'nt I just put a piece of heavy duty foil over the top and get the same steam effects? Hubby says I have too many wonderful pans already and no space left to store everything, I can't disagree!
BEST ANSWER: with foil wouldn't you have a hard time monitoring the cooking? the lid holds in moisture and heat so food cooks much more quickly - foil wouldn't create a true seal. also, the lid is glass so you can see your food as it cooks, and you can make sure not to over-do it. you can't do that with foil.

BEST ANSWER: Yes, these are suitable for an induction cooktop. Just be careful about moving this heavy pan around on this or a ceramic cooktop to avoid scratching the cooktop surface.

Can it be used on an outdoor gas or charcoal bbq grill?
BEST ANSWER: I don't know. My perspective is that this is a specialty pan, for indoor grilling on a stovetop to cook healthy, moist, meals while minimizing smoke creation in the home. (It says it is ovenproof to 500°.) I do not know why anyone would risk using this beautiful cookware on an outdoor grill. So many of the questions in this section can be answered by reading the product description right here on this website. There's even a video!

Can I put this in the dishwasher?
BEST ANSWER: It says you can,however I never put my Staub grill pan the dishwasher because the pan gets a nice nonstick seasoning on the surface after a few uses and the harsh dishwasher/dw det would remove it. This is my favorite pan for meats and vegetables. I have retired my LeCruest grill pans because this staub is easier to clean and love the lid!

will it produce smoke?
BEST ANSWER: I haven't set off my smoke detectors! I find it depends on what I'm cooking. My favorites so far are vegetables and unless I leave them too long, they do not tend to produce smoke. Meats, especially with higher fat content do smoke some, but I have a good extractor fan that keeps it manageable. I am also finding that if I keep the lid on throughout the process things stay moist, and cook faster, but still get a nice char. It takes some experimenting, but so far I'm having fun and really liking the results.

Can you use this on a cooktop stove?
BEST ANSWER: I have a gas cook top and this grill works wonderfully. I grill various kinds of veggies and meats. It can get really hot if you desire that. It makes beautiful grill marks and adds that nice grilled taste to your foods. I love the results!

Does it require a certain pot?
BEST ANSWER: No. I bought this grill pan because of it's lid (few come with a lid). I used it last night for breaded chicken breasts (which I pounded to an even thickness). Applied a bit of oil to the cooking surface, heated the grill to med. hot; coated chicken, and put the chicken in. I seared both sides (nice, golden brown grill marks), then added about 2 tbsp water and put the lid on. Chicken continued to cook and when we ate it, it was cooked completely and still moist. Great pan! (To clean - since some of bread crumbs stuck, I added hot water to the cooled pan, heated it to boiling, turned the stove off, and - this morning - simply rinsed, applied more hot soapy water and wiped it clean.)

BEST ANSWER: Hi, yes the pan can be used on a glass top stove, I have one and the pan does great. The heat is evenly distributed over the bottom of the pan.

does the food stick to the grill?
BEST ANSWER: It depends on what you are cooking to be honest. I have had a chicken breast stick slightly but not enough to be a problem, steaks, pork chops and lobster tails do not stick and are easily seared and flipped. I control the cooking process by not setting flame to high (gas stove) and adding a touch of spray oil now. It cleans up easily and we love the process especially with a nice fillet or lobster tail. I hope this helps.

We used our new steam grill & it is very difficult to get clean. What's the best way to wash it?
BEST ANSWER: First of all, I absolutely love this steam grill. I have other cast iron grills but this is my favorite. The first time I used it, I stressed over getting it clean and had a hard time. This is what I have found works the best: bring water to a boil for a few minutes and then empty it out and repeat. I also use the scrapper that came with my George Forman grill. It helps to get the cooked on stuff off that collects in the bottom of the ridges. I have also used a scrub brush made for Lodge cast iron. Finally, if it doesn't all come clean, I don't worry about it and consider that I am seasoning it.

BEST ANSWER: It does but not anymore than other pan. Do not use any oil on the pan. It heats so well that the oil smokes significantlyand the clean up after using oil is a challenge. The pan is heavy. However it works fantastically. I cooked two chicken breasts in it with only a little salt and pepper on the chicken and they cooked so tender, moist, and quickly that when I need a quick meal; it will be my go to pan. I will not use it every day though due to its weight, size, and clean up. I have a Scanpan grill pan that is lighter and smaller that works as well but smokes too.

Can the Staub Steam Grill be used on a glass top stove?
BEST ANSWER: Yes. We have a glass top induction range. However, this grill is heavy and, as with any cookware, you can scratch the surface if you are not careful. With that being said, on our range, it stays in place nicely.
