Guittard is the only chocolate I use to make ganache! I keep these in the freezer so they are always fresh. PS. I admit snacking on these at night right out of the freezer!

Can this chocolate be used for making candy?

BEST ANSWER: Yes! I don't even temper traditionally; put 3/4 the amount you are using and microwave in 30-second intervals, stirring every 30 seconds until melted, the add last 1/4 amount and stir til smooth and glossy.
