Great bread!
Bread tasted great. We either used too much yeast or just made too large a loaf - it raised up and stuck to the lid. Heck of a time getting it un-stuck. Next time, we'll try reducing yeast a bit and oiling the inside of the lid. Despite that issue, love the pan.

I already have one of these Emile Henry bread bakers. It's the best loaf pan I ever had. Used according to directions, it puts a perfect crust on every loaf. The results are beautiful AND delicious. So I bought this second pan because I want to bake two loaves at a time.

Despite oiling sides and base of the Emile Henry rectangular bread maker the finished loaf still sticks to the lid and sides?

What size loaf does this bake ? My recipe is a 2 lb. loaf

BEST ANSWER: My recipes are all for six-cup loaves. So I make the dough according to recipe. Then I cut it the dough half and put it in two loaf pans -- so I got two, three-cup loaves that fit perfectly in two nine x five loaf pans. Problem solved.
I generally make wetter doughs (using Ken Forkish's Flour Water Salt Yeast book) and the dough starts to slip through the holes in the bottom, making it stick in the holes when baked. Is there a solution?

BEST ANSWER: I don't know if this will work because I don't bake much rye or other 'sloppy' doughs: but if I was having your problem, I'd cut me a couple of small (2"x2") squares of parchment paper. Lay the squares of paper in the bottom of the baker, one on each hole. Then put the dough in the baker and shove it in the oven. The parchment squares will keep the dough from oozing out the holes long enough for the oven to do it's job, but I believe that as the bottom of the loaf crisps up, the parchment will lift enough to let the holes do their job.
Since it is burgundy clay like the flame caserole pots, is this also flame/stovetop safe ?

BEST ANSWER: I would not use this item on the cooktop. It works exquisitely in the oven and I have managed to make wonderful loaves of bread. It is a thin clay baker with a red glaze (I believe it comes in a black glaze too), and direct heat from a gas flame would likely crack it. I have all of these Emile Henry bread bakers and love them. The holes on top allow steam to escape for a nice crust. I use Staub and Le Cruset for cooktop to oven dishes.
