It is affordable, beautiful, and not that heavy, and keeps the warmth perfectly. I cook a lot of stews and this is perfect. First came broken and Sur la table sent me a new one. Thank you!

Raised black drops
I have used it to boil eggs and make vegetable soup. Works wonderfully. However, after using twice, I now get black raised drops on the outside only. Very strange.

Bakes bread as well as my cast iron Dutch oven, and is lighter and easier to clean. It's brand new, so I haven't had opportunity to cook anything else with it, but so far, no complaints.

Light, sturdy, holds heat wonderfully. I can't imagine why anyone would want a cast iron pot when this is so much lighter and better.

Did everyone follow the instruction to pour hot milk to the bottom of the casserole? Mine got a funny texture after pouring the hot milk in, while that's the instruction given by Emile Henry. I don't know if that's normal.

BEST ANSWER: Yes, but I did it on low to low medium heat. I didn't boil the milk hard. Mine stayed the same color. These pots don't need high heat. It's very steady on medium heat. Love these pots! Moist chicken in the oven! Great bread!
Hello, this likes like a great little pot. The specs only give dimensions for the 4.2 quart size. Can you tell me the outer/inner dimensions with and without handles and lid for the other sizes as well (esp. the 2.6 quart)? Thanks!

The only dimensions given are for the 2.6 quart. Can you provide the dimensions of the heights, with and without the lids, and the diameters/widths, with and without handles for all the other sizes? I am particularly interested in the 5.5 qt. and the 7 qt. but I am sure that someone will need the information for the others as well. Thank you.

Is it safe to use the casserole to store the food in the refrigerator after it is cooked?

BEST ANSWER: One of the great features of this cookware line is being able to freeze, refrigerate, and cook in the same vessel!

It's definitely safe for the cookware. Follow the guidelines about allowing the food and dish to cool or warm first; avoid moving anything directly from the oven/stovetop to the refrigerator/freezer, or vice versa.

If you're asking whether it's safe for the food, it should be, provided you follow the usual protocols about how quickly to refrigerate hot foods, how quickly to heat cold foods if intending to serve hot, and use clean utensils for serving, to avoid introducing any extra bacteria. (You can find helpful information on the USDA site as well as through local extension/coop services or universities.) If you're nervous about cooked food losing moisture, you could add plastic wrap and then the lid for a little extra protection.

How do I prepare to use an Emile Henry Dutch oven?

BEST ANSWER: We found two suggested procedures, one involving scalding milk and the other, rice. Some people had complained about the milk method leaving a sour smell in the pot, so we boiled rice in it, and then discarded the rice. I believe this is supposed to "seal" the glaze and cleanse it for use. Remember, when cooking on the stovetop, ALWAYS have liquid in the bottom. It's a great pot for soups and stews.

BEST ANSWER: You can sear meat. it is not really a saute pan and I have no idea about popcorn. I don't see why not. You need to be careful of how high you turn the heat with out much stuff in it. Contact Emile Henry on line.

BEST ANSWER: The majority of EH items do not have emblems, just the name on the bottom and some other markings.
I HAVE A FILM THAT HAS FORMED ON THE INSIDE OF MY POT. I WASH IS OUT AND IT IMMEDIATELY COMES BACK. I CAN'T GET RID OF IT AND I;M CONCERNED ABOUT USING IT. I USE THIS POT OFTEN FOR SOUPS AND STEWS. WHAT CAN I DO? IT IT SAFE TO USE?
