SPECIAL VALUE
Inspired by the slowly simmered, heavily seasoned cuisines indigenous to North Africa, the Moroccan tagine is a classic example of form following function. Its distinctive lid allows for the constant return of condensation to the base, moistening ingredients and tenderizing tough fibers within the meat.
And because it’s crafted from durable cast iron, the tagine retains heat longer and cooks food more evenly and thoroughly. Traditional Moroccan tagines (the dish is named for the cookware) typically include a combination of braised meat (often lamb, beef or chicken), fruits, root vegetables and fragrant spices like cinnamon, saffron and ginger.
Versatile cast iron base is also suitable for browning vegetables and meat on the stovetop, or for warming tortillas in the oven, while the colorful stoneware lid is designed to circulate heat and moisture.
Designed to inspire cooks to explore a bounty of exciting regional dishes from around the world, Le Creuset’s World Cuisine Collection is now available for the first time in the US—and only from Sur La Table.

Love my Le Creuset tagine!
We have been using the Le Creuset tagine for over a year now and love it. The cast iron base means I can use it directly on the gas stove top to meld the garlic, onion with the carrots and cinnamon sticks and spices before adding the meat and a bit of stock. Then it gets popped into the oven and I can relax before dinner. We have even used it when travelling in our trailer over a wood/coal fire because of the cast iron base. Just include a bit of stock or wine to keep everything moist and serve with a roasted veg and great crusty bread. Comes pre-seasoned and ready to use

How many servings for smaller tagine vs larger tagine by le creuset?
BEST ANSWER: More for larger tagine. My primary recipe for the initial purchase prepared a certain quantity that the larger rather than the smaller one accommodated. I have both sizes. I'm glad I do. Servings don't necessarily mean you can fit something into a certain size pan. Serving sizes are relative, in my opinion, not absolute. You have to eyeball it. I've never forgotten advice given by a valued high-profile mentor who said more than 25 year ago, "How large is your family?" You can't make a pan larger if you need to." I was in his store for what he knew, not for what I knew. I felt privileged to listen to him. In other words, sometimes you just chop up ingredients that produce a larger volume than you anticipated. Tagines and Le Creuset are both tremendous advantages. If you can, never hurts to have both sizes. Hope this is helpful.
