Can these dishes also be used on a gas stovetop? Judith Jones recipe for shirred eggs seem to indicate using a gratin pan on the stovetop.

BEST ANSWER: No. They aren't meant for use on an open flame or electric burner. I think you would need a metal gratin pan for that recipe. These are versatile and high quality but not suitable for that use.
