The world’s most advanced cookware.
Description
EXCLUSIVE
A kitchen essential available in two sizes, these covered sauté pans deliver amazing results at every meal. Perfect for everything from sautéing vegetables to browning meats—they make it easy to sear, deglaze and create a delicious sauce all in one pan.
No matter the task, our exclusive Demeyere Silver7 collection is engineered to deliver perfect results every time. The product of two years of collaboration between Sur La Table and Demeyere, this is the most technically advanced high-performance cookware you’ll find anywhere.
Each Silver7 pan is designed to deliver optimal performance for its specific use. This versatile sauté pan features InductoSeal®, which combines silver and a 2mm disc of copper hermetically sealed in an 18/10 stainless steel TriplInduc® base that’s laser-welded to the pan. The 7-ply construction combining two unique technologies ensures optimal heat distribution throughout the entire base and provides a heat-conducting surface that’s 33% larger than traditional pans. For ultimate versatility, pans are induction compatible and heat safe to 500°F.
Unlike conventional cookware, Silver7 pans remain flat and true across the base as they heat so oil coats evenly. Pouring rims help prevent spills, and extreme stay-cool handles feature an enlarged flange for hot air to pass through. Handles are welded to pans without rivets, preventing food and grease buildup. Plus, Silver7 is the only cookware that features a double-wall lid, which stays cool to the touch and conserves heat for faster cooking.
All Silver7 cookware features Demeyere’s proprietary Silvinox finish—a unique system of electrochemical surface treatments that removes iron and impurities from the surface. Pans resist discoloration from fingerprints and heat, retaining their silvery shine even after years of use.

Silver7 vs Industry5
The Silver7 is simply astounding. Definitely for the person who values performance and longevity. I took both saute pans and did a few tests.
Boiling Water
The Silver7 took about 30 seconds longer to boil, though the bubbles were dispersed more evenly towards the edge of the pan
Searing
I didnt time the preheat.. but took both to Leidenfrost.. about 400F I think.. anyhow, both pans sear well, the Silver7 went darker faster though. Probably because it has a thicker base.. more potential heat energy stored up.
Sauteing
I threw a mirepoix into both pans with a little drizzle of EVOO, Silver7 cooked the onions to translucent a bit faster. Otherwise, same result.
Fit and Finish
Both pans are tremendous. Incredibly sturdy stay-cool handles, well-fitting lids.. but the Silver7 takes it up a notch. DOUBLE WALLED LIDS. Are you kidding me Demeyere?! You probably don’t think you need this, but you do. Trust me. I’m pretty sure I could simmer something for an hour and not need a mitt.

more in love with demeyere!
I have been a big demeyere fan and have owned pieces of atlantis for quite some time. With this new line, I was not disappointed! I love the new feel of this line and it heats up food quickly and more evenly. Excited to build more of my collection!

I love this pan!
There are so many things to like about this pan. Because of the silver in the pan, it heats up quicker than my All-Clad. I had to turn the heat down so the pan wouldn't get too hot. This saves energy! The double walled lids are amazing. I had the lid on the pan for 30 min. and I could still take the lid off without oven mitts--it stayed that cool. I really like the design of the pan - modern and beautifully shiny. I can't wait to add more pieces to my collection.

It lives up to the billing of "The world's most advanced cookware"
The most amazing saute pan I've ever used. Heats up quickly, the food cooks evenly and gets hot without burning... amazing! I love this little guy and can't wait to buy the full collection.

Time saver
I liked the 3qt version of this pan so much that I decided to give the 5qt a go so I could brown all the meat in one batch for the sake of time. I made use of the Demeyere one pan Creamy Chicken Thighs recipe and the pan worked great. Any residue stuck to the pan from browning released completely with no effort. Heating was even (I have a radiant heat surface) and the higher sides kept splatters well contained. No pot holders needed as the heat did not transfer to the handles or lid.Pan held the heat long after it was removed from the heat source. Clean up was super easy (I used an e-cloth dish sponge). Because this is a large, heavy pan, it may not be favored by some home cooks. However, the way it performs will far exceed any negative aspect of size and weight concerns. I highly recommend this saute pan as well as the 3qt as well as any piece in the Silver 7 line for all-around performance.Don't let the price be your deciding factor. Read the product description to truly appreciate the value. Note: I am not paid for reviewing this or any other product. My love for cooking led me to educate myself on the best value: time & money, and I've found that Demeyere truly delivers,ALL things considered. I use both the 3 and 5qts frequently depending on what & how much I'm cooking.Made in Belgium. Excellent warranty by the way.

Good sauté pan
This is an excellent pan but it is heavy. It cleans easily, however there are already a few stains. I hand wash it after letting it cool.

More impressive than it is expensive
Expensive, yes. Impressive, even more so. Bought this as a very nice holiday gift for my girlfriend, start taking notes gents. Used it a few times already and we are both blown away by it's ability to distribute heat evenly. This pan probably costs more than the her cheap stove with four of the equally tiniest gas burners I have ever seen on a camp stove, let alone a kitchen oven. Even with the small burner on medium flame, still small at maybe 5 or so inches, the 5 quart pan ,some 11.5 inches, heats evenly all the way out to the edges with no hot or cold spots. The pan does a great job fending for itself with distributing the heat in the copper and silver, a better conductor than copper. Despite the technology, the first time I was concerned throwing in a handful of meatballs in a large pan with a small flame. We were both stunned when they all cooked evenly, regardless of where they were in the pan. We didn't have to move them around from the outside to the inside or anything silly like that. The pan gets hot and stays hot for a while which for some will include a learning curve on getting used to this pan, think like cast iron vs thin clad or non stick pans.
The long cast steel handle on the pan doesn't get hot, it will get a little warm, and maybe if doing a lot of searing under high heat it will get hot, but nothing we have noticed of concern yet. The small grab handle on the opposite end is big enough it is actually useful and easy to grip. It helps balance the pan in all directions when moving the pan if it is full of food or water. It will get warm, but nothing a hand towel or small oven mitt cannot handle with ease. If you are doing something quick, you can sometimes get away with using your bare hand.
The double wall lid is just as amazing. The handle doesn't get hot when using on a stove top. It is really impressive.
Shaking the pan for cooking, vs tossing with tongs or something else, is ill advised. Due to the 10 pound punching class this is in, it is a very heavy pan, but would show in your arm and grip strength in a few evenings. Not to mention, it has vertical walls.
Cleaning is a snap, no rivets. Soak in water with soap and hand wash for best results.
With all that amazing stuff said, waiting for a coupon or a sale is advisable due to the price.

Is Silver7 the replacement for Atlantis?
Is the 7 ply construction only on the bottom of the pan or is it all the way up the sides?
BEST ANSWER: I believe the 7 ply construction is only on the bottom of the pan, I have had great luck with the pan as it holds a very even temperature. I have a gas range and the bottom is larger than my units but the heat is very evenly conducted. A great sauté pan.
