Description

Chefs have known for centuries that egg whites beaten in the presence of copper form more voluminous and stable foams. This clever whisk delivers all the advantages of copper without the bulk and expense of a copper bowl.

When copper comes in contact with egg whites, its molecules bond with egg proteins, making them more pliable and able to expand without rupturing. This makes it easy to form emulsions that stabilize quickly for fluffier peaks and better results when cooking. Now you can spend less time whisking and more time enjoying your delicious creations.

Amazing omelettes
This whisk is great for creating a fluffy omelette, without having to use a big bowl. The copper looks beautiful but has a very special chemical reaction with eggs.

A Must in All Kitchens!
I think it must be the copper, but I've never had such success with egg dishes before using this clever whisk. Well done, who ever invented this tool; I hope you sell a lot of them: they work!

Nice quality
I didn't want to pay for a copper bowl, so I thought I'd try a copy whisk. It works very well for egg whites, though I am no baker!

This whisk is so useful and beautiful. I like this size when I am beating 2 or 3 eggs. It is amazing how fluffy the eggs are- that chemical reaction with the copper is amazing.

I love the way eggs are so fluffy from the chemical reaction with copper. I have the balloon whisk as well, but for just one omelette this one is perfect.

Is the whisk solid copper or is it bonded, plated, or something else and if it is not solid copper, what is the metal that is plated, bonded etc... ? I am looking for a solid copper whisk. No plating no bonding... just copper.

BEST ANSWER: That's a good question. Being that metallurgy is somewhat above my pay grade, and that I've only had the copper whisk for a couple of weeks, I can't say that it is not solid copper, although, it demonstrates the flexibility and character of a regular steel whisk.
As a cook, however, I can say that it works very well and I am happy with its performance in delivering eggs whisked as if in a copper bowl,
Perhaps the manufacturer, or Sur la Table can give you the technical info you are requesting. Good luck.
Are the whisks themselves (excluding handles) 100% copper, or is there another material underneath which is then plated with copper? (I’ve noticed this happening more and more—I almost bought a set of copper (dry) measuring cups at Sur La Table when I noticed the copper had flaked off, revealing stainless steel below.) Thanks for your help!

BEST ANSWER: The copper of the tines is metallurgically bonded (not plated), so it can't flake off. Flake off can happen with items that are plated, but that will not happen with this whisk.
I get wonderful beaten egg whites with my copper whisk. Would beating eggs with the copper whisk in a copper bowl give an even more voluminous result ?

BEST ANSWER: I would think so, as it works very well for me in a "normal" bowl. That's why I opted for a copper whisk rather than a copper bowl. However, I really don't know because I only have the copper whisk.
