A fall spin on a classic chicken stew with subtle Oaxacan mole flavor.

Description

Fragrant, sweet, savory and subtly spicy, our starter sauce turns basic chicken stew into a complex Oaxacan dish—with a hint of pumpkin for an autumnal twist. Simply brown chicken on the stovetop, then add the sauce and simmer for a quick weeknight meal, or toss it all in the slow cooker and cook it slow and low for an ultra-easy meal. It’s also great with rustic root vegetables and makes a great topping for rice or couscous.

DUTCH OVEN DIRECTIONS:
  • Pumpkin Chicken
  • 4 lbs boneless skinless Mole Starter chicken thighs (halved)
  • 2 Tbsp olive oil
  • Salt and pepper


Lightly salt and pepper both sides of chicken. In a sauté pan, add oil and heat on medium to brown chicken on both sides. Cook for 8 minutes. Add sauce, bring to a boil. Reduce to a simmer and cook for 20 minutes.

SLOW COOKER DIRECTIONS:
Prepare as directed above, but cook in a slow cooker on low setting for 4 hours. Add vegetables in the last hour of cooking.

SUGGESTIONS:
Instead of chicken, try with seasonal root veggies or cook them with chicken for additional heartiness. Serve over couscous or rice. Garnish with pepitas, scallions, cilantro or golden raisins.

This sauce is wonderful! I just threw the chicken in the slow cooker and put the sauce over it, and put it on low for 8 hours, and it turned out perfectly! Add a little Louisiana hot sauce to it and you're in business. I served mine over rice. Would definitely recommend.

BEST ANSWER: No, it’s a pumpkin mole sauce.
You add chicken and some squash and cook together with the jarred sauce.
It’s delicious
It has a little kick to it too!
