Generally good Staub cast iron design—poorer lid design
As a regular cast iron "steam griddler" this pan delivers on a wide 12" base—and the usual awesome Staub finish—but the shallower sides depth doesn't contain spatter as well as were it with deeper sides. And a glass lid isn't nearly as effective as a domed, vented metal lid—both for lightness and durability, as well as for allowing the minimum of condensation to form.

Wow...Exceeded my Expectations
This is a greate everyday pan that looks so nice, I'm leaving it on the cooktop. Love the high lid which allows for steaming and cooking larger/higher types of food. Cooked chicken so quickly and browned nicely at same time. Easy to clean. Can't think of one thing I'd say that is bad about this pan.

Excellent Choice
This griddle is better than I hoped it would be! I have cooked several different foods on this griddle including eggs and cheesy sandwiches. The egg and cheese products come right off while cooking. The clean up is a breeze as well.

Staub Hits a Home run
The new Staub 12" Steam Griddle is so versatile that I leave it on my stove top ready to use. I find that it has replaced many of the skillets I usually use. The lid is wonderful and it serves many purposes plus it prevents splatter. It has been great for reheating leftovers, cooking entire meals, burgers, fish, sausage, hash browns, eggs, pancakes, etc. The clean up is so easy!! Plus I use it to serve at the table.

The cheese on the burgers was melted perfectly and the the griddle was easy to clean! Cannot wait to try steaming chicken. We love Staub cookware!

Awesome pan!
This is my second Staub pan (I also have the 10" grill pan) and I love it! I've made burgers, chicken, and steaks and they've all come out perfect. Love the taller lid.

"Go-To" grill

Staub Steam Griddle
I am obsessed with this steam griddle. It makes a perfect sunny side up egg and great for pancakes and whatever else you want for breakfast. But it is equally amazing on seafood. You can get a perfect sear on fish and scallops and then finish off with the lid for steaming. I’m using it tonight for bison burgers. The lid will go on at the last to melt the cheese, great quality, very heavy construction like all Staub- clean up is a breeze

If for some reason I wanted to put this in the oven, what temperature range could it be used up to safely? My primary concern is the glass lid.

BEST ANSWER: Under non-direct heat (aka a salamander or broiler), assuming the tempered glass lid isn't cold when placed in oven, 375–425•F is a safe assumption—though Staub lists it safe to 500•F

How does this compare with the Staub steam griddle?

BEST ANSWER: I have the Perfect Pan - it's fairly deep and more wok shaped. it has a good volume capacity but the bottom of the pan is fairly small so you wouldn't be able to use like a griddle at all. Depends on your goal for this pan I would think.

Once you have crispy skin on chicken or fish, does covering with lid case crispness to turn soggy?
BEST ANSWER: I have only used it a few times, for unbranded chicken and pork chops. They turn out really tender. I also use it for over medium fried eggs. I don't think crispy breaded items would stay crunchy after the steaming. I bought the griddle because I have been so pleased with the Staub Steam Grill. If I had to choose between the two, I think I would pick the Grill. I've had great success with chicken breasts, steak, pork chops and veggies. You get perfect grill marks, and moist, tender results. I even bought one for my son for his birthday, and he loves it. I think I just need to experiment more with the griddle. My only complaint about both of these is the scarcity of recipes tailored to them.

Oven safe?
I'm confused. Does the inside of the pan have ridges on the bottom or is it smooth?
BEST ANSWER: This pan is smooth. I like it for frying bacon and for grilled cheese sandwiches.

Can I use it on a propane gas grill?
BEST ANSWER: Yes you can. It is cast iron, so you can used it without an issue. The only thing I'd recommended is to clean very well your grill because the dirt and burned fat on it could stain your Staub, and those spots are hard to get rid off.

Is this pan broiler safe?
BEST ANSWER: It should be. The pan is cast iron, so it can be used for grilling, broiling, baking,etc. Regarding to the lid, the product specification said is oven safe up to 500F, so it also should be safe for broiling, just considered that direct heat over the lid can smoke it or even brake it if it is exposed to a sudden change of temperatures, at the end is glass.

Can you ue Metal utensils?
BEST ANSWER: It is enameled cast iron so I would avoid using metal utensils. I do use my metal tongs to turn items, just be careful. BUt I do stick to plastic spatulas and spoon otherwise.

What's the difference between this pan and the Staub steam griddle?

BEST ANSWER: The mattone is less than two inches high and works like a griddle to cook maybe a chicken or steak. It doesn’t have a lid or a cover than seals in juices like the steam griddle, and you place the stoneware top on your meat to cook it more uniformly. You can brown and cook meats on the steam griddle, but you close up the pan with the lid to steam-cook it.

BEST ANSWER: These are very comparable as they're made of the same material, but the Steam Griddle is shallow with a flat surface. It's meant for pan frying while the Perfect Pan is meant more for one pot meals.
