This clever griddle and press from Staub was inspired by the Tuscan technique for using a mattone (brick) to create intensely flavorful chicken with incredibly crispy skin. Weighing down a butterflied chicken helps ensure a uniform thickness so it cooks quickly and evenly on the cast iron griddle. Plus, the weight of the ceramic press enables the fat under the skin to render and melt out, delivering the most deliciously crisp skin we’ve ever tasted.

BEST ANSWER: I have both and use the lid on either. I also use the press in both depending on what/how I'm cooking. The pans are basically the same with the exception that the steam grill has the raised ridges. I use both of these a lot.
Does the press work for bacon? I assumed so but then noticed it said it shouldn't come into contact with the pan surface and of course bacon can be pretty thin...

BEST ANSWER: The press is designed to weight down food “of substance” like a whole chicken or hunk of beef. If you put this press on bacon, you will be scraping up charred bacon...and probably ruining your bottom pan.

BEST ANSWER: The mattone is less than two inches high and works like a griddle to cook maybe a chicken or steak. It doesn’t have a lid or a cover than seals in juices like the steam griddle, and you place the stoneware top on your meat to cook it more uniformly. You can brown and cook meats on the steam griddle, but you close up the pan with the lid to steam-cook it.
