Fabulous for braising or stove top cooking
I am pleased to see this Staub 6-qt. Shallow Wide Round Cocotte offered once again. It seems it is only offered every so often and this is a great price. I got one several years ago and it is one of my absolute favorite pieces of cookware. In general, Staub cookware is thicker and heavier than Le Creuset. I love them both and have several pieces of each brand. Staub earns major points in my book for its special black interior that really helps in browning foods and searing meats. The size and wide, shallow shape of this pot is what makes it a super star. It's wonderful at making large stews. It's great for braising large pieces of meat such as a fresh beef brisket or corned beef brisket. It has lots of room in the spacious bottom for browning. It will hold 4 or 5 lbs of beef short ribs with ease plus all the aromatics and braising liquid. You can do all the cooking on the stove top or tuck it into the oven to complete cooking. I always finish my braises in the oven for best results--and they are magic with this great pot. Meats are incredibly succulent and tender! No other piece of cookware in my collection can match those results.

As with all cast iron cookware, it takes a while to preheat them and you want to start out on low heat, then gradually turn up the heat until you reach the cooking temperature you want. For a piece this size, I preheat the pot on medium-low for 5 to 6 minutes and gradually increase the heat during that time. I don't put any cooking oil in it until the last couple of minutes because oil will heat faster than the pot itself. This is a critical secret for using this type of cookware that I wish I knew many years ago when I got my very first piece of enameled cast iron cookware. Back then, I could never get it hot enough to brown meats and was very disillusioned with it--until I learned this vital secret for preheating the pot. Now they are the go-to stars in my kitchen.

I recommend hand washing this cookware. If there is any food residue stuck to the bottom, I just let the pot cool down and then add some warm water and let it soak for at least an hour while we enjoy our meal. Scrape the softened residue free with a non-metal scraper (wood works well), then wash, rinse and dry.

I highly recommend this pot to you. Treat yourself. You won't be disappointed.

These pots are the best!
We waited to get this larger pot. We couldn’t wait any longer when Sur la Table had the best price I’ve ever seen! (They have much better Staub inventory than anyone else as well.) We call it the larger Piglet Pot and it works as beautifully as all Staub pans. The secret is to remember to start at low heat and increase as needed. They reach and retain heat better than any pot I’ve used. So you use less energy.

BEST ANSWER: YES! This is a great cast iron cocotte and a favorite for oven braising. The following is from Staub’s web site for this particular cocotte - “Oven safe up to 900F without lid, Lids are oven safe up to 500F”. I love to sear on the stovetop and then transfer to the oven.
Is the orange cocotte the same color as the burnt orange in Staub?
