    What makes them great is what you can't see
    These pro line skillets are built like tanks.
    Very even cooking. They don't have hot spots in the pan. Ever notice one part of your pan can be bubbling butter and another part is not? These pans will not do that. The 7 ply is not just on the bottom of the pan. It goes from edge to edge. That's what sets Demeyere apart from the competition

    if i only live 30 more years...
    then this pan only costs $10/year.

    buy it right, buy it once. that's fairly obvious. the hard part of that mantra is coughing up $ for one pan. once i saw this pan in use, i knew i had to have it. i'm so glad i got it! i love sauteing in it, my proteins have a beautiful glaze on them every single time. cleaning is easy afterward, too. while my meats rest, i deglaze the pan with water and wipe it out. simple

    THE ABSOLUTE BEST COOKWARE
    i STARTED OUT WITH JUST ONE PAN AND LOVED IT. NOW I HAVE A FEW. THESE ARE WELL MADE, HAVE EXCELLENT BALANCE OF THE HANDLE VERSUS THE PAN. I PERSONALLY DO NOT USE NON STICK PANS. I HAVE NEVER HAD A PROBLEM WITH ANYTHING STICKING IN MY PANS. YOU WILL LOVE THEM. THEY ARE NOT CHEAP, BUT WELL WORTH THE PRICE.

    The quality can't be beat and I love that it does not have the rivets for food to stick to. If you get the pan hot enough (think dancing mercury ball), nothing will stick. It may appear to stick at first but when the meat is ready to turn, it will release/unstick. If you should burn anything in it (I've gone to get herbs and forgot and started weeding), it comes clean by simmering lemon juice and baking soda.

    I ordered this because of the promotion and I have just put in an induction range. I have other Demeyere Atlantis cookware and they are amazing. This cookware is well made with top notch well thought out design for cooking and durability.

    I recently purchased two other Demeyere pieces, and I am very happy with them. I've had a Demeyere Atlantis straight-sided saute pan for years, and it still is a favorite, and still looks like new. I use an induction range. I love the surface used in the Atlantis series, and the way the heat is conducted evenly across the pans.

    The Atlantis skillet is a 7 layer with copper/aluminum with just 2 sizes. Does that go up the sides or is this just on the bottom? The proline is 7 layers but it only has aluminum but it states it goes up the sides. And the Industry5 has only 5 layers. Is there a significant performance difference between the 3? Also, Williams-Sonoma has a Demeyere plus so is that the same as Industry5?

    BEST ANSWER: Unlike any other Demeyere line, the composition of Atlantis cookware varies by vessel. Straight sided pieces--like sauce pans & sauté pans--have an 18/10 stainless steel cooking surface, but that is the only layer that goes up the sides. The cooking surface has the same 18/10 stainless steel surface, but it also has two layers of silver with a layer of copper sandwiched between & three proprietary layers called "TriplInduc", which make it induction compatible. Conical shaped pieces--like sauciers--have seven layers that go all the way up the sides. The top layer is 18/10 stainless steel, followed by three layers of aluminum & three layers of TriplInduc. Because frying pans need to have optimal heat retention, they have the same seven layers as conical pans, reaching all the way up the sides, but the they have more aluminum in them.
    Proline & Atlantis skillets are actually one in the same, so the product description on the Atlantis page will be changed, while the Proline description is correct.
    Industry5 has an 18/10 stainless steel cooking surface, three layers of aluminum & an 18/0 bottom layer, but no TriplInduc. Therefore, Atlantis/Proline will heat up a little faster & retain heat a little longer than Industry5, but you wouldn't notice a major performance difference in the two unless you have an induction cooktop, as Atlantis/Proline is up to 40% more induction compatible.
    Industry5 does seem very similar to the Demeyere 5-Plus that Williams Sonoma carries, but since I called Williams Sonoma & was told "any information that isn't already on the website is confidential & kept by the corporate office," I'm afraid I can't give a comprehensive comparison on the two.
    How does the 8" lid fit an 8" Demeyere Atlantis/Proline skillet? Is it a little larger or a little smaller? (important to avoid steam from settling and running down the sides of the skillet)

    BEST ANSWER: Demeyere does not have lids that can be purchased seperately for the 12.6"" skillet. They are known for creating the perfect pan for its intended function and skillets do not traditionally come with or require a lid

    BEST ANSWER: I can't provide an official answer, but as someone who owns an Atlantis 11 inch saute pan and two Proline skillets (*9 in and 11 inch I think), they both appear to be the same. I LOVE the pans and would highly recommend them.

    I am looking for a skillet that is 11-12" across the bottom, stainless steel, not nonstick. I have looked at the All Clad, Le Creuset. Are there others I should be considering?

    BEST ANSWER: Check out the Demeyere Atlantis line. The pieces are expensive, but they are worth every penny. I have three of their skillets and I am very impressed with the way they perform. I think they fry as well as cast iron, so I've gotten rid of the cast iron skillets that I had. The Demeyere Industry 5 pans are also a good choice. I have one of their nonstick and I love it.
    When cooking with a Demeyere Proline Skillet, is it okay to use metal utensils such as spatulas and spoons ?

    BEST ANSWER: With ordinary use (flipping eggs, etc.) you may get scratches on the cooking surface. This will probably not affect the performance. But if you are using metal utensils to scrape off burnt-on food, or otherwise applying a lot of force, this may result in more gouging and eventually a rough surface that is harder to keep clean. These are not non-stick pans. But if you follow the manufacturer's usage tips (they have videos on their website), cooked items usually release easily. I use non-metal tools, just to be careful.

    Can a Brillo or a S.O.S. scouring pad be used to clean a Demeyere Proline Skillet?

    BEST ANSWER: I wouldn't recommend it, you will definitely scratch the finish if you use steel wool. On the rare occasions I get something really stuck, I just pour boiling water into the pan, let it set for a couple of hours, and then use a soft sponge and it cleans up nicely. I like this pan and use it quite a bit, I don't usually have problems with residue sticking to it (although it is quite heavy).
    How high are proline skillets rated for oven temperatures?

    It says it's oven safe, but even Demeyere's own website gives no information. I know Atlantis's disk-bottom pieces are rated to 600F, but Proline is built differently (different materials and cladded up the sides)
