Best Beer Ever
Used Wyeast 1056, definitely the best beer I've made. It's got good bitterness, not as much hop aroma as I'd like because I dryhopped after cold crashing like an idiot. Still an amazing beer overall, if you haven't made this yet, it has to be at the top of your list. The next time I do it, here's what I'll follow: 14 day ferment, first week at 63, then bump up to 70 to finish it off. 4 day dry hop at 70, THEN cold crash to 34F for 72 hours. Transfer to serving keg, fine with 1/2 tsp gelatin and 1/4 cup water. Carbonate at 34F for 7 days at 15psi.
