Shout it from the rooftop, or keep it as a chef’s secret, either way it’s pure magic!
I don’t know whether to shout it from the rooftop, or keep it as a chef’s secret, but this skillet is pure magic. I have the Scanpan CTQ set, but the lure of a better sear and the promotional price was too much to resist, and I purchased the 11” CS+ skillet today. Tonight we had the most decadent steak with mushroom topping, all smoky seared deliciousness in the CS+. I couldn’t be happier with my purchase. Something about the texture of the skillet makes searing meats and veggies not only possible, but perfection, and all with an ease I thought only came with years of technique and practice. This skillet will make you a chef. Buy it. You will be glad you did.

Slippery
The nonstick surface is great! I just used it on a fried egg without oil and it was truly nonstick.

Meets My Needs, But . . .
Pan does exactly as advertised, but 400º oven turn the bottom of the pan brown. Didn’t expect a pan at this price to do that.

Best pan ever!
I do a lot of induction cooking cooking outdoors to avoid splatter in my kitchen. This pan sears as well as my cast iron, and is a heck of a lot easier to handle and clean. The surface is totally non-stick and very hard. This is now my "go-to" skillet, I love it!.

Love the Scanpan
I am a grandmother who has always loved to cook. I needed a new non stick pan and had heard good things about Scan pan brand. So I ordered it. Then I cooked some sautéed potatoes with a pat of butter. On my gosh, the potatoes browned on the bottom without sticking! yes! Then I cooked steaks, they seared perfectly and remained med rare in the middle. The 11" size is really very useful and it has high sides for adding sauces.

Great non stick pan
Previous non stick pans I've used seemed fragile and didn't last but this one has an amazing surface and shows no signs of wear (albeit it's only been 6 meals so far)

I just received the 8" and I love it. That plus the sale made this decision easy.

I have been using scanpans for several years on induction cooktop and the non stick feature holds up well as opposed to other pans. Made in Denmark and not in China - where I find the non stick pans don't last very long. This is my 3rd purchase of a Scanpan. Plus the technology they use seems to be the safest.

Old non-stick pan is getting shabby (and sticky), the promotion on this was good and the reviews were great. Hope it lives up to the reviews.
Ruth S on Jan 14, 2019
I love Scanpans. I have them in all sizes. They last much longer than other non-stick pans. Most non-stick pans have to be thrown out after awhile, because they get all scratched up. Scanpans don't scratch that easy.

What is the difference behind all the letter designations for Scanpan - please rate these from lowest to highest - and I'm not seeing the 11" lid sold separately for the CS+?
Joann M on Aug 9, 2018
BEST ANSWER: I can't say about if there's a strict ranking between the pans but they seem to have some different features. This pan is one of the best non stick surfaces I've used though.

I bought the scanpan professional 11in lid and it fit my cs+ perfectly.
From the photos, some of these pans seem to have more sloped sides than others. I want a pan that easily makes omelettes and sloped sides are very important for that. So which size pans have the more sloped sides?
Howard W on Jul 24, 2018
BEST ANSWER: They are somewhat sloped..... but not as much as, say, an All Clad. That said, I much prefer the Scanpan to the nonstick All Clad. It will be great for omelets. Very slick surface. And it's a safe material.
How does the Scan Pan CS Stratanium non-stick
compare with ceramic non-stick cookware?
Shari K on Jul 29, 2018
BEST ANSWER: The Scanpan is a lot slipperier. In my experience, ceramic does not last, it's too easily damaged if you overheat it.
I have induction cooking. I have purchased the CTX small fry pan and it's wonderful. Now I can buy CS+? What's the difference?
Nicki on Dec 13, 2018
Does the 12.75” pan have a helper handle?
A shopper on Jul 29, 2018
BEST ANSWER: No, it doesn't. It could use one though, as these are very heavy pans.
Are the Scanpan CS+ skillet dimensions that are provided, taken from bottom of pan (burner contact area) or at the widest portion (top lip)?
Dennis S on Aug 3, 2018
BEST ANSWER: 8.5 inches at the contact (bottom). 11 inches inside diameter at the top. Incidentally I've tried some other nonstick sauté pans on our induction cooktop that had poor heating qualities. This is very good.
There are so many issues abt non stick pans that aren’t safe for food preparation, is this an exeption?
A shopper on Aug 2, 2018
BEST ANSWER: SCANPAN stands by the safety of its products. For more information, please visit https://www.scanpan.com/scanpan%E2%80%99s-nonstick-surface
Dose this pan come with cover?
A shopper on Aug 2, 2018
BEST ANSWER: No. Skillets have no covers.
Are the listed sizes for the scan pan cs the diameter of pan or the total length with handle?
Janice A on Aug 11, 2018
BEST ANSWER: It is the diameter across the inside of the top of the pan (i.e. it doesn't include the width of the metal)
Is the stratanium coating the same in the scanpan CS+ and the Pro S5? Is it worth paying more for the CS+?
A shopper on Oct 31, 2018
Scanpan CS+ Skillet
Scanpan CS+ Skillet
Scanpan Pro S5 Skillet
Scanpan Pro S5 Skillet
BEST ANSWER: CS+ uses Stratanium+, which is more textured than the original Stratanium surface on Pro S5. The texture offers superior searing and nonstick release in addition to commercial-quality longevity, but both versions of the Stratanium surface allow you to sear, brown, and sauté as well as cook without oil if you so desire. CS+ pans are clad in stainless steel, so they are heavier and offer better heat retention than Pro S5.
Does this pan work on an induction cooktop?
David W on Aug 2, 2018
BEST ANSWER: Under features it says: Compatible with all cooking surfaces, including induction and oven safe to 500°F
I cannot find CS+ series on the scanpan official website. They only have CTX and CTQ and others. What is the difference between CS+ and CTX/CTQ? Is this a new model?
Boris C on Sep 6, 2018
BEST ANSWER: All three lines are clad in stainless steel on the exterior, but CS+ (which is exclusive to SLT) is the only line with the new commercial-grade Stratanium+ cooking surface.
Lids. Is there to buy that matches the pan?
A shopper on Aug 3, 2018
BEST ANSWER: Yes, Scanpan makes a lid that is the correct diameter to fit CS+Skillet. Just call
Sur La Table for their prices.
By the way, this skillet cooks to perfection whatever you use it for!
Unlike Ceramic "Green" pans (which I would avoid like the plague), can you use Olive Oil in these?
Jeff V on Dec 27, 2018
BEST ANSWER: I use olive oil in my scan pan with no issues. This has been a great pan...really the best nonstick pan I have owned. Anything from eggs to fish to Szechuan green beans have turned out perfectly in this pan. And it’s iven safe too.
Can you use non stick sprays to sauté/stir fry in this pan? Trying to cut unnecessary calories...
Vicki W on Jan 14, 2019
BEST ANSWER: No. The manufacturer of Scan Pan says do NOT use cooking sprays. It builds up on the surface and leaves a sticky residue. You can brush oil on the item you are cooking, but really it isn't necessary. This is one amazing pan.
How well does it take 450 degree oven for 1 hour?
A shopper on Dec 31, 2018
BEST ANSWER: The only oven cooking I have done with it is a broil at 525 degrees. It is holding up well. The broil is appx 5-7 minutes at a time, and I do it 2-3 times/week. I’ve been doing this since I received the pan at the end of September.
On the 11 inch CS Skillet are the sides really 4” tall? Specs show that they are.
A shopper on Jan 10, 2019
BEST ANSWER: I don’t think so. I placed my pinkie on the flattest area of the inside of the pan and measured maybe two inches deep. I am guessing they are measuring the curve from the flattest section of the bottom of the pan. I hope that helps you.
Is there a lid for this pan, CS+ 11”?
A shopper on Dec 5, 2018
BEST ANSWER: I couldn't find one on the Sur La Table site. I don't know if one exists on another site. I use this pan for sauteing and making Dutch babies in the oven and don't find the lid necessary. If you want a good pan with a lid, check out the Staub (All Day Pan with Lid) pan below. These are the two pans I use the most.
Staub Heritage All-Day Pan with Domed Glass Lid, 3.5 qt.
Staub Heritage All-Day Pan with Domed Glass Lid, 3.5 qt.
I like the Evolution line with the no rivets. Is the new coating on the CS+ markedly better to consider upgrade?
A shopper on Nov 27, 2018
BEST ANSWER: I have not used the Evolution line, only CS+ which I find fantastic for any dish I am preparing. Nothing
ever sticks; everything browns well, no overcooking. I love this line of non-stick pans. I do a lot of cooking. I am particular about the pans I use. This pan is one of the best I have used for what it is designed to do.
Hope this feed-back helps. Happy cooking!
We cook a lot of omelets and over easy eggs. Will they stick at all in this skillet? I do cook using oil so it wouldn't be a dry skillet.
Holly C on Aug 11, 2018
BEST ANSWER: I cook over easy eggs with no oil at all in my CS+ pans and they never stick. With oil you'll get more flavor, though!
can you cook on high heat?
A shopper on Oct 10, 2018
BEST ANSWER: I have not cooked on high heat because the pan conducts heat so well and cooks food so well
without excessive browning I have not had to use high heat....if you give me more information about
what you are cooking, I can give you a better answer.....Do you mean sauce deduction?
You can use higher heat to do that, but super high is not necessary. Hope I gave you some information.
Sincerely, a fellow cook
This pan has actually lost its coating and food sticks now. We have had it only a year and a half and may only use it 5/6 times a month. Is there any way this can be sent in for repair or recoating?
Suelr on Dec 11, 2018
BEST ANSWER: These pans have a lifetime warranty. Contact Scanpan via their website at Scanpan USA. I had to have one pan replaced and it was a relatively painless process.
does it work well with induction cooktop?
A shopper on Dec 13, 2018
BEST ANSWER: Absolutely. I hesitated a long time before trying Scanpan because of the cost. But not only does it work as well or better than any others I've tried but even after daily use for several years, I haven't had to replace any of my Scanpan cookware due to the untimely demise of the nonstick surface. And the new one's even better.
Is a cover available for purchase?
Larry K on Aug 18, 2018
BEST ANSWER: Yes, search for any scanpan lid in the right size. For example, I bought the scanpan professional 11in for the 11in CS+ and it fit perfect.
