Description

EXCLUSIVE Sur La Table has partnered with Miyabi to bring you a unique Kiritsuke—a multipurpose Japanese knife typically used by experienced chefs. Unlike traditional Kirisuke blades, ours is double-beveled meaning both left- and right-handed chefs can chop, slice, julienne and brunoise with it—not quite as traditional, but easier to use and sharpen.

The culmination of a 10-year partnership between Miyabi and Sur La Table, the exclusive Hibana collection features original blade and bolster design combined with a gorgeous 49-layer Damascus pattern on the blades called “Spark” (The English translation of Hibana) that both strengthens and protects. Handles are triple-riveted and have curved, ergonomic bolsters for the utmost comfort using the pinch grip technique preferred by professional chefs—more so than most Japanese knives on the market. Sleek black and brass spacers on the handle add to the beauty of the knives and add a slight heaviness that promotes sturdiness in hand and maneuverability at the tip.

Great Slicer
I’ve been using this knife almost daily for 4 months. It’s great for slicing cooked or raw meats and fish (even sushi), finely dicing vegetables like potatoes, carrots, and shallots. The blade is very thin, which makes it a great substitute for a nakiri. The shape, though, is not so good for “rock” chopping herbs, though, so it’s not a great substitute for a chef’s knife.
About the steel sharpness: Knife was incredibly sharp out of the box, but edge seemed to deteriorate very quickly. After using it for about 2 weeks and honing regularly, I put my own edge on it, which held up for months. As for steel, I prefer to VG-10, but SG-2 is in a different class.
Overall, I think this is a great knife that’s a bit overpriced. Would be much better value for $160, but it is unique. I’m glad I bought it though and it gets plenty of use.

I have owned several Miyabi knives throughout the years and this one is a step down for sure. The FC61 is extremely inferior when compared to VG-10 or SG2. This knife does not hold an edge as long nor does it get as sharp as my Miyabi knives made of SG2 or VG-10.

When it says 49 layer damascus. Is it clad on both sides like the birchwood for a toatal of 98 layer or is it clad with 24.5 layers each side for the toal of 49?

BEST ANSWER: It has 24 on each side plus the core for a total of 49 layers. (24x2)+1=49
