"Easy to fill, easy to clean"
Madeleines tend to be very easy to burn, so I like to put the pan in a water bath while they bake to encourage even cooking. This pan is not the same as the small jelly roll pan which was annoying and made the process difficult. However, it made classic madeleines that were delicious. It is easy to fill and wipe between each well before putting in the oven and it was easy to clean

Loved It!
I bought this mold based on another reviewer's opinion, and agree wholeheartedly with her review. She also suggested using a water bath during the baking process; I did not, and although both batches were delicious, they were a bit overdone. So use the bath, like the lady suggested (unless you prefer brown edged Madeleines).

Great product

The pans are great -- the only fault I have with them is that the price tag was left stuck to the pan, and I have had a very hard time getting it off, as I don't want to scratch the pan. Don't particularly want to live with the residue OR scratches. Come on, Sur La Table, think ahead on this one next time!

Is this pan a pure stainless steel or a mix of aluminum?
Alina M on Feb 17, 2017
BEST ANSWER: Hi Alina,
I guess it's a stainless steel not sure if it's pure!
I use them for my Madeleine baking and to be honest they're the best. I purchased it almost 2 years ago and I'm in love with how my madeleines are baked in them.

Hope this helped.

What is the nonstick coating? Teflon?
anne on Feb 1, 2015
BEST ANSWER: I gave the mold as a gift so I can't physically check it but I do not recall that it was non-stick. I believe you would have to grease it.
