Huge Fan!
This has become my go-to pan and the one I grab first for everything. I've had my Scanpan for two years and the non stick peforms as well as it did on day one.

I can't say enough great things about this cookware! It's really well made, heats fast, cooks evenly, and is so easy to clean. I love that I can not only cook an omelette perfectly every time, but that I can also brown and caramelize in this pan as well

Love this pan
I use the 8"" skillet every morning for my breakfast, and I can't say enough about it. I've used it just about every day for about a year, and finish is just as smooth as the day I bought it. It's super easy to clean and the nonstick surface is completely unparallelled.

All in all, it's a great pan for a great price

Worked great, for a while...
I purchased this pan about 2 years ago after trying multiple cheapo non-stick pans. For the first several months, this pan worked like a charm - I could use a minimal amount of ghee/oil to cook with, since the non-stick actually worked! Within the last few months, however, I have had a LOT of trouble- no matter how much ghee/oil i use, my eggs stick to the pan every.single.time. I'm super bummed, and looking for a new alternative pan.

Excellent product
I have the 8"" and 12"" skillet. Originally my goal was to buy a non-Teflon, non-stick pan. I first purchased the 8"" skillet and glass cover. My experience with the pan has been amazing. I can now fry an egg using just a little water and the glass over! Heat the pan up, crack an egg in it. Wait till it starts turning white, put in a few tablespoons of water, cover the pan and after a few minutes, - a nice, perfect egg over easy! No burned brown bottoms of fried eggs and they just slide right out of the pan. I used this pan consistently for a few weeks to see if the surface would wear or change. It didn't. So I went and bought the 12"" skillet and lid. Next I cooked a big rib-eye steak. It browned perfectly and looked just like it came off an outdoor griddle. The heat dispersion of the pan is excellent - even and constant - a mark of a great design. The pans are on the pricier side but they are worth every penny

Great Skillet!
I have been an SLT employee for ten years, and this is hands-down the best nonstick pan I have ever used. I have three sizes, and I use at least one every day. I love that they are scratch resistant and dishwasher safe, too. One of the best investments I have made in my kitchen

Best Pan Ever!
I LOVE THESE PANS!! I have the 8"" and the 12"" skillets, and I have used them almost every day since I bought them. Some non-stick pans will discolor your food...but not Scanpan! Super easy to use, and clean. They are always my ""go to"" pans

Hubby can't destroy it
We've had the wide range of those other 'non-stick' pans for ages. No matter what I said, my family and hubby in particular, always used metal utensils on them and I was forever replacing them and repeating ""Black on black, metal on metal.""

Decided to give Scanpan a try even though I was doubtful. Started with the 8"" pan and it quickly became the 'go to' pan for everything from eggs to grilled cheese. In fact, it just sits on top the range. No sense putting it away. It cleans up fast, doesn't stick, requires very little fat or oil (in fact none works well, too), and isn't bothered by metal spatulas at all. It feels solid, but not too heavy, and has a nice balance.

Here's something else about the pan besides the nonstick quality�it has a nice flat bottom. Even with the curved sides, there's good 'cook space.' Be aware though, for people who are upgrading from standard skillets, this one has a disk on the underside for even heating. What this means is that it takes longer to heat to searing temps. I usually just put a drop of water in it to see if the water beads and bounces to see when it's ready.

At first I hesitated because of the cost, but in the long run, it's definitely more cost effective to get a Scanpan than to keep replacing the cheaper pans that don't last as long or take a beating. I'm replacing all my skillets with Scanpan

Perfect for eggs
I love eggs and love them sunny side up, so having a glass lid is crucial. The first time I used it, I decided to put it to the test and not use any oil, butter or water. The egg cooked nicely, and slid off the pan without using a utensil, but a little butter definitely tastes better :)

Definitely the best nonstick I've used to-date

This pan is perfect for no-oil cooking
I have been cooking without adding oil for the past 6 months. I have been searching for a non-stick pan that is environmentally safe and that does not have a ""coating"" that will break down. This pan meets those criteria. Plus it is perfect for browning onions, celery and carrots or mushrooms without any additional fat. I have just ordered the 4 qt. saucepan also. Of course, an added bonus is that clean-up is just a breeze

Great value
Very little oil required to a obtain a nice sear . I use my Scanpans daily with NO labor intense clean up afterwards.

I thought I'd never replace the lovely little 6" cast iron skillet I use for cooking eggs, but this 8" pan is amazing! Browns foods with no added fats or oils, and eggs cook and slip out perfectly! Pan washes clean in a flash, with no 'seasoning' required.

Took a knife skills class and they said these pans are to die for especially if cooking with kids. They aren't made with the harmful teflon that is why you can't scratch your other pans

in addition to the ceramic-titanium coating, the product description states that ...""A specially formulated nonstick compound is then embedded in the surface."" What is THAT compound

BEST ANSWER: Both ceramic and titanium are incredibly hard materials. After having pressure-cast the raw pan body, the ceramic-titanium compound is super-heated to 36,000 degrees F (thirty six thousand degrees!) at which point it liquefies. The ceramic-titanium enters a "plasma state." That liquid plasma is then fired into the pan surface at twice the speed of sound. Lots of heat and impact. The ceramic-titanium literally anchors itself in the aluminum surface and becomes one with the pan.

BEST ANSWER: Suggest switching brands. Went through 6 Scanpans in 2-1/2 yrs—multi-sized fry pans & deep-sided sauté pans. Could not completely remove stuck-on eggs, etc. Food stuck despite adding large amounts of ghee or olive oil to pans.. Contacted a company rep, who confidently advised me to use Bar Keeper, which did not work at all. I never used high heat nor metal tools while cooking with these pans. Also, only tried to clean them with nylon-net scrubbers toward the ends of their usefulness. Big disappointment. Switched to All Clad HA1 2 yrs ago. I've been picking them up in multiples on sale, based on bad Scanpan experience. I still have not replaced the first 2 fry pan purchases, and their nonstick properties have not diminished significantly. When I rinse them—yes, simply rinse & wipe dry—their surfaces remain smooth. Save your money and switch brands!
What is the difference between Classic and Pro IQ?

BEST ANSWER: The Scan Pan products are pretty amazing!!! Yes they are heat resistant up to 500 degrees, even with the plastic handle. This means that if you use them in the oven, they will not melt, warp or become damaged from the heat. They can get very warm when used in the oven though, so please use mitts when removing them

BEST ANSWER: Really don't know but I am assuming that it's healthier to use than older products. It works wonderfully - good heat conduction and cleans up easily.
Why does the description state that it is compatible with all cooking surfaces, except induction? What is the issue with induction?

BEST ANSWER: Induction cooking surfaces use magnets within the cooking surface and the magnetized base within induction-compatible cookware to generate heat. The benefits of this type of cooking surface are that it typically heats very quickly, and once the piece of cookware is removed, the cooking surface becomes cool almost immediately.

Cookware in the Scanpan Classic line wasn't made to be induction-compatible, as its base is non-magnetized. However, Sur La Table does carry three exclusive lines of Scanpan non-stick cookware which ARE induction-compatible: Scanpan IQ (the Classic line with a magnetized base; available only online), Scanpan ProIQ (the Classic line with a magnetized base and an ergonomic metal handle), and Scanpan CTQ (a 5-ply clad line [5-ply refers to the five layers of stainless steel, aluminum, and aluminum alloy that make up the base of the pan.] with a magnetized base and an ergonomic metal handle.

BEST ANSWER: The Scanpan is incredible. The first time I used it was to cook a fried egg in a Sur La Table cooking class. I added a very small amount of olive oil to the pan just to give a nice coating. While cooking I literally had to hold the egg in place with a spatula to keep the egg from slipping away from me just to turn the egg over. That is what sold me on the pan. I purchased the pan ( 8") that night when class was over. I have had my original pan for about 3 years now and use it daily. The surface is still as good as new. Cooks and cleans like a dream. Best skillet I have EVER used. I have also since purchased two more sized plus the lids.
What type of cooking spray can be used with scan pan?
My recipes call for nonstick pan and using cooking spray.

BEST ANSWER: Scanpans are so non-stick that you don't really need any spray. When I need a little for browning purposes, I put a little oil in the pan and wipe the excess with a paper towel. Skip the spray the propellant messes up the pans. Excellent pans!

What size glass lid fits the 12 in classic skillet? I see 12 1/2 in lids but none exactly 12 in... please advise if this will fit.

BEST ANSWER: I have not had that happen. You should take it to Sur La Table and get their opinion. I believe the pans have a lifetime warranty.
