not non-stick
I have 2. Neither is non-stick. I have to put a little oil on with paper towel. Also, VERY easy to scratch. The first one scratched from using tongs to turn over zucchini slices. I baby the second one after buying rubber tipped tongs. I don't put it in the dishwasher

They misspelled the name
This pan name is off by a letter.. Replace the first 'N' with an 'M' and then this pan will be properly spelled and represented. My ScamPan sticks like crazy, I feel like this product has been mis-represented to consumers. People shop hard these days to find products that will do what they say they will do, and that includes lasting for more than several months or a year, money is tough to come for working people. I will pay more money to the person who makes a product that is quality, and I thought that is what I had done here, but obviously this is not the case. ScamPan!

This pan is about the best pan I have ever used.....for about 3 years. As stated by other users nothing is actually covered under their lifetime warranty. I assure you with any kind of regular use this pan will wear out completely. I will never buy this brand again unless it is heavily discounted and go in knowing that it will only last a couple years.

Limited Use
I have only used my 12" Classic skillet once so far. It worked fine; but I can't give a 5 rating based on a single use.

Lasted only 3 years
At first, this pan was great. I cleaned it after every use, never used anything abrasive on it, and yet it lost its luster and non-stick ability and generally looks like an old, used, low-quality pan. The company claims to have a lifetime warranty, but the warranty is essentially useless as it covers almost nothing. When contacting their warranty department, they sent pictures of all the things that were not covered, which again, is basically everything. I'm very disappointed that I spent so much money on a pan that lasts as long as much less expensive alternatives. If the warranty was legitimate, and I could get a replacement or repair, I would have given 5 stars since it initially was a good pan.

I've had my 8" skillet since May. In that time it's been in the dishwasher several times, I've taken it up to high heat to sear a steak, turned sausage patties with a metal fork and even put it in the oven. I'm giving it 5 stars because even after all of that it STILL looks brand new! I love this pan.

I thought I'd never replace the lovely little 6" cast iron skillet I use for cooking eggs, but this 8" pan is amazing! Browns foods with no added fats or oils, and eggs cook and slip out perfectly! Pan washes clean in a flash, with no 'seasoning' required.

in addition to the ceramic-titanium coating, the product description states that ...""A specially formulated nonstick compound is then embedded in the surface."" What is THAT compound

BEST ANSWER: Both ceramic and titanium are incredibly hard materials. After having pressure-cast the raw pan body, the ceramic-titanium compound is super-heated to 36,000 degrees F (thirty six thousand degrees!) at which point it liquefies. The ceramic-titanium enters a "plasma state." That liquid plasma is then fired into the pan surface at twice the speed of sound. Lots of heat and impact. The ceramic-titanium literally anchors itself in the aluminum surface and becomes one with the pan.

BEST ANSWER: Suggest switching brands. Went through 6 Scanpans in 2-1/2 yrs—multi-sized fry pans & deep-sided sauté pans. Could not completely remove stuck-on eggs, etc. Food stuck despite adding large amounts of ghee or olive oil to pans.. Contacted a company rep, who confidently advised me to use Bar Keeper, which did not work at all. I never used high heat nor metal tools while cooking with these pans. Also, only tried to clean them with nylon-net scrubbers toward the ends of their usefulness. Big disappointment. Switched to All Clad HA1 2 yrs ago. I've been picking them up in multiples on sale, based on bad Scanpan experience. I still have not replaced the first 2 fry pan purchases, and their nonstick properties have not diminished significantly. When I rinse them—yes, simply rinse & wipe dry—their surfaces remain smooth. Save your money and switch brands!
What is the difference between Classic and Pro IQ?

BEST ANSWER: Scanpan Pro IQ is induction compatible and has ergonomic stainless steel handles, whereas the Classic is not induction compatible and has plastic handles.
With the scanpan classic be put in the oven considering the handle is plastic?

Under product description it states the scanpan classic is heat resistant up to 500 degrees is this true with it having a plastic handle?

BEST ANSWER: The Scan Pan products are pretty amazing!!! Yes they are heat resistant up to 500 degrees, even with the plastic handle. This means that if you use them in the oven, they will not melt, warp or become damaged from the heat. They can get very warm when used in the oven though, so please use mitts when removing them

What type of utensils should you use with Scanpans to not damage the pan?

BEST ANSWER: It says any type. I'm so conditioned not to use metal, that I rarely do. I really like the good plastic or those colored silicone products that go in the dishwasher too. Wood is OK, but I don't put that in the dishwasher. When I burn something rather than scrape it, I rinse it and get out what I can, and then put some Dawn in the pan with some water and bring it to a boil and let it sit a while. Works every time.

Why does the description state that it is compatible with all cooking surfaces, except induction? What is the issue with induction?

BEST ANSWER: Induction cooking surfaces use magnets within the cooking surface and the magnetized base within induction-compatible cookware to generate heat. The benefits of this type of cooking surface are that it typically heats very quickly, and once the piece of cookware is removed, the cooking surface becomes cool almost immediately.

Cookware in the Scanpan Classic line wasn't made to be induction-compatible, as its base is non-magnetized. However, Sur La Table does carry three exclusive lines of Scanpan non-stick cookware which ARE induction-compatible: Scanpan IQ (the Classic line with a magnetized base; available only online), Scanpan ProIQ (the Classic line with a magnetized base and an ergonomic metal handle), and Scanpan CTQ (a 5-ply clad line [5-ply refers to the five layers of stainless steel, aluminum, and aluminum alloy that make up the base of the pan.] with a magnetized base and an ergonomic metal handle.
Is the nonstick surface good for cooking eggs? I like a really slick teflon type experience for fried or scrambled eggs.

BEST ANSWER: The Scanpan is incredible. The first time I used it was to cook a fried egg in a Sur La Table cooking class. I added a very small amount of olive oil to the pan just to give a nice coating. While cooking I literally had to hold the egg in place with a spatula to keep the egg from slipping away from me just to turn the egg over. That is what sold me on the pan. I purchased the pan ( 8") that night when class was over. I have had my original pan for about 3 years now and use it daily. The surface is still as good as new. Cooks and cleans like a dream. Best skillet I have EVER used. I have also since purchased two more sized plus the lids.
What type of cooking spray can be used with scan pan?
My recipes call for nonstick pan and using cooking spray.

BEST ANSWER: Scanpans are so non-stick that you don't really need any spray. When I need a little for browning purposes, I put a little oil in the pan and wipe the excess with a paper towel. Skip the spray the propellant messes up the pans. Excellent pans!

BEST ANSWER: I've never made Egg Beaters, but my understanding of non stick surfaces is that a pan needs to be heated before cooking an egg, whether it's a non stick product or a high quality stainless such as All Clad. Eggs should be cooked around medium, never high as well. Because I've never used Egg Beaters, I went to their website and someone had indeed posed the question under FAQ about "how do I scramble egg beaters?" Their answer is to heat the pan and use non stick spray, pour it in, let it set and flip it. The issue with that, is that you are not supposed to use non stick spray in a non stick pan. It damages the surface over time. They sell the food product, not the pan. You've bought a great pan, and not an inexpensive one, so you should follow the pan manufacturer's instructions. I have three of them and will never buy another brand of non stick they are so good. That being said, if you're using egg beaters, you're probably trying to avoid fat and cholesterol, but everybody needs some healthy fat in their diet. I would use a light brushing of olive oil, specifically the kind for sauteeing, not the more strongly flavored ones for salad dressings and cooking, unless you prefer that taste. Just put maybe 1/2 a tsp in there and brush it around with a silicone basting brush you can toss in the dishwashwer, or a plastic or wood spatula type product. You can use metal in Scanpan but I'm so conditioned NOT to do that in non stick cookware, I just don't usually. I hope that helps.

What size glass lid fits the 12 in classic skillet? I see 12 1/2 in lids but none exactly 12 in... please advise if this will fit.
