The tins are great; minor quibble about stickers
I bought the 3-1/2 inch size and have used them for mushroom tarts and mini-quiches. Both came out perfect and w/o having to oil the insides. I'd be happy to give this 5 stars, except there were paper stickers on the tins that gave me fits. The paper came off easily enough with soap and hot water, but the adhesive underneath was very difficult to remove and has left a stain on the removeable bottoms that is still there after several washings. Seems like it reacted with the metal somehow. :'-( Other than that, a good product.

What is the best solution to get the baked product out of the whole tart pan w/o breaking it?
BEST ANSWER: I saw a suggestion on a baking blog that says you should put a few strips of parchment paper in the pan so when the tart is done you can tug on them and loosen your tart for removal.

BEST ANSWER: Tinned-steel mold is perfect for individual desserts and make the cutest little tarts I have ever seen. These are one whole piece and do not have the removeable bottoms that the larger tart pans have.

Is the 4 inch deep enough for apricot or peach tart tatins?
BEST ANSWER: No, I don't think it would be. Most every recipe I've found shows it made in an oven proof frying pan, which is usually at least 2" deep.

Why are the price tags put inside the tart tin and not on the bottom? The stickers are very difficult to remove and discolor the interior. What's the best way to get the sticker off?
BEST ANSWER: I had the same problem, but was eventually able to get the tags off. First I scratched off as much as I could with the old "fingernail method." By soaking them in hot water, I was then able to remove the rest of the paper label, but still had the gooey, sticky adhesive to deal with. I found a solvent at the hardware that took care of that. The tins are great and I'm glad I bought them, but taking those tags off was a chore!

BEST ANSWER: No, they do not have a removable bottom.

Are the 2" tart pans a good size for the Brie and onion tart that you feature?
BEST ANSWER: No. You'll want a 13 or 11" one with a removable bottom.
