Will the Gobel nonstick mold rust?
BEST ANSWER: I always hand-dry my molds and put them away completely dry. This way, they have no chance to rust. Why take a chance?

Which size would I use for a standard 1-lb brioche?
BEST ANSWER: I honestly don't have a good answer for that. I will use a 9" loaf pan for a 1 1/2 lb. of dough for regular bread and I think 1 lb. would be good for a 7" brioche pan. I tried to find the answer online with no clear answers.
