Description
The Miyabi Kaizen collection combines advanced ice-hardening techniques with the artistry of traditional Japanese craftsmanship. The knives are carefully crafted with a vg10 “super steel” core that is surrounded by a graceful Damascus pattern that exposes the meticulously forged 65-layer steel construction.
Blades go through a Cryodur four-step ice-hardening process for superior strength, flexibility and corrosion resistance. The edges are then hand-finished by master craftsmen using a traditional three-step honbazuke blade-honing technique for a lasting edge. The resulting blades are optimally sharpened to precise angles for outstanding edge retention.
Ultra-durable black micarta handles feature mosaic pins, eye-catching red accents and logo end caps.

Would highly recommend this knife
I have enjoyed using this knife. It maintains a sharp edge and has been razor sharp since purchased. Since the knife has a slight rocker, I can use it like a chef's knife as well as in a chopping motion like a santoku blade. It is a beautiful knife and I would highly recommend it

My go to knife!
I'm vegan so I need a knife that makes working with vegetables easy and this knife fits the bill perfectly. The handle is extremely comfortable. The blade is super sharp. The scalloped blade means that onions, carrots, celery, potatoes, etc. don't cling to the blade. I very much like the fact that this knife doesn't have a sharp pointed tip like a typical chef's knife. I am finding that this is the knife I reach for over and over again.

Beautiful knife, for all kinds of cutting. So far after many uses it is staying very sharp.
I wish it had a little sheeth of sorts, but that has nothing to do with the quality of the knife!!! Cutting on a "soft" surface i.e. Wood, bamboo etc will keep the knife at its best.

How is the red miyabi logo on the right side of the blade created? Is it some kind of paint? If so, I would be concerned about lead levels.
What is the difference between the Miyabi Fusion and Kaizen Santoku knives?
BEST ANSWER: The difference between these two knives is simply the handle. The Miyable Fusion was given its name because it has an Eastern blade and a Western handle-thus, a "fusion" of cultures. The Miyabi Kaizen has an Eastern, D-shaped handle, which is typical of Eastern knives. Kaizen in Japanese means "Improvement, or change for the better."

Will the Miyabi Kaizen rust or is it stainless steel?
BEST ANSWER: This knife is stainless steel. If your tap water has a high iron content (like our water here in Southern California) then any stainless steel could have the appearance of rusting if not dried after washing. The steel isn't actually rusting though. It's the iron in the water that actually produces rust once it dries. Wash your knife by hand and dry it immediately and you should not have any issues with rust.
