Using Zwilling’s exclusive Sigmaforge process, knives are precision-forged from a single piece of Friodur ice-hardened high-carbon German stainless steel, laser-cut for optimal blade angles and finally polished by hand. This results in a sharper blade with a 57 Rockwell hardness for excellent edge retention and superior resilience.

An Excellent Chef's Knife
I am usually partial to Wusthof knives as I have been using them for years. While I will not revoke this statement and remain a loyal Wusthof fan, I must say that I am loving my new Zwilling Pro 8"" chef's knife. Here is why:
-The smooth-sloped sides of the blade in front of the bollster provide a comfortable pinch-grip. This also facilitates easy cleaning.
-The half bollster allows sharpening from heel to tip.
-The curvature of the blade's edge allows for easy roll-chopping and for asian-style chopping (more of an up-and-down motion).
-It is very sharp.
-The price point is typical for a knife of this quality.
If you are in the market for a quality, forged chef's knife, consider this new design from Zwilling. I am happy to have it in my collection

Excellent cook's knife
I purchased this knife to see how if compares with my other German knives and am delighted to say it is now my favorite. The handle fits my hand to a tee, the bolster area of the blade makes for a very comfortable ""pinch grip"". The knife's blade's ground a bit thinner than is typical for ""GERMAN""knives - less drag and the steel is wonderful. This blade retains its shapeless longer than most of my others and it's simply a joy to use. (I may have to get the 10 inch but don't tell my wife...

My favorite tool in my kitchen.
Finding a knife is like finding a pair of pants, you have to find one thats comfortable and when i tried this knife its like its a part of my hand. i can use this knife all day long and not even notice

My Favorite
Fantastic Knife. It's heavy and has great balance. It's comfortable to hold, plenty sharp and very durable. Plus, it's a good looking knife, but not flashy. Easily the best knife I've owned

Ergonomically easy.
Looked around for my first chef's knife as I was getting into school and wanted something that'll last and something on the heavier duty side. I handled most knives but really fell for the ""pinch"" grip of this knife. Didn't want to dump a lot of money on a knife for a beginner knife so pricing was also really nice

Great option for novices looking for a chef's knife
Incredibly sharp and well balanced!! Was looking for a chef's knife with very little background in quality knives and I am very happy with this knife.

An excellent knife
I've been using this knife daily for a year. It is very durable and shows very little sign of wear, even though I have dropped it a couple times. It doesn't dull quickly (still needs honing, of course) and is weighted perfectly for me, allowing me to chop and cut through just about anything with ease. It's durable enough to cut through large/tough vegetables such as squash and potatoes, and it does the job fabricating meat as well. I've found it suitable for just about every task except cutting large melons (you'll need a longer blade for that).

How long does it hold an edge?
BEST ANSWER: With proper use, this knife stays quite sharp. The blade is durable and not prone to damage. As with any chef's knife, it's important to hone it regularly (every day or several times a day depending on what you're cutting and how much) and to use a good stone when it needs sharpened. I use Wusthof's tri-stone every 4-6 months just to keep the blade razor-sharp. I absolutely love this knife--I've been using it for a year--and would recommend it.
